Mole Amarillo Oaxaqueño (Oaxacan Yellow Mole Chicken Stew)
Why this recipe works
- Layered chilli base: Guajillo, ancho, cumin, oregano, garlic and tomato are cooked together before blending, giving the sauce depth before the chicken goes back in.
- Masa-thickened sauce: Masa harina gives the mole a lightly creamy body without dairy, helping it cling to the chicken and vegetables.
- Classic stew structure: Browning the chicken, simmering it gently in the sauce, then adding vegetables near the end keeps the meat tender and the vegetables bright.

Adjust the heat
- For a gentler mole: Reduce the chilli powders slightly and keep the cumin, oregano, tomato and epazote in balance so the sauce still tastes rounded.
- For more heat: Increase the ancho or guajillo gradually, tasting once the sauce has simmered so the chilli flavour has time to settle.
Authenticity notes
- Oaxacan yellow mole: Mole amarillo is one of Oaxaca’s recognised mole styles, typically lighter and more herbal than darker moles, with masa used for body.
- Epazote’s role: Fresh epazote gives the stew its distinctive herbal edge; coriander can work as a substitute, but the flavour will be brighter and less traditional.
Ingredient notes
- Use bone-in chicken: Bone-in thighs or drumsticks suit the long simmer because they stay juicy and add savoury depth to the sauce.
- Prepare chayote properly: Peel, core and cut the chayote into bite-sized pieces so it cooks evenly and keeps a gentle bite in the finished stew.
- Masa matters: Masa harina gives the sauce its characteristic corn aroma and texture; ordinary flour will thicken, but it will not give the same flavour.
Make-ahead tips
- Good for making ahead: The mole develops well after resting, making it suitable for cooking a day ahead and reheating gently before serving.
- Reheat gently: Warm in a saucepan over low heat, adding a splash of water if the masa-thickened sauce has firmed up in the fridge.
- Freezer-friendly: Cool quickly, freeze in a sealed container, then defrost overnight in the fridge before reheating until piping hot.

Instructions
- Season the chicken thighs all over with 1 tsp of the fine sea salt. In a large pot over medium-high heat, brown the chicken in batches, skin-side down first, until the skin is deep golden and the fat has rendered, 10 to 12 minutes total. Transfer to a plate, leaving the fat in the pot.
- Add the guajillo chili powder, ancho chili powder, ground cumin and dried oregano to the pot and stir for 30 seconds until fragrant. Add the garlic and cook for 1 minute, stirring so the spices do not catch. Tip in the tomatoes and cook for 6 to 8 minutes until softened and jammy.
- Scrape the tomato and spice mixture into a blender and add about 250 ml of the chicken stock. Blend until very smooth, then pour back into the pot. Bring to a gentle simmer.
- Whisk the masa harina with 200 ml of the chicken stock in a saucepan over medium heat until smooth and lightly thickened, 3 to 4 minutes. Whisk this slurry into the pot to thicken the mole, then add the remaining chicken stock and the remaining 1 tsp fine sea salt. Simmer for 5 minutes, stirring occasionally, until the sauce coats the back of a spoon.
- Return the chicken (and any juices) to the pot, nestling it into the sauce. Cover and simmer gently for 35 to 40 minutes, turning the pieces once or twice, until the chicken is tender and cooked through. If the sauce thickens too much, loosen with a splash of water from the kettle.
- Peel the chayote squash, halve it, remove the core, then cut into bite-sized pieces. Trim the green beans and cut into short lengths. Add both to the pot and simmer uncovered for 10 to 12 minutes until the vegetables are tender but still bright.
- Stir in the epazote and simmer for 2 minutes, then taste and adjust with a pinch more fine sea salt if needed. Rest off the heat for 5 minutes so the flavours settle. Serve hot with plenty of sauce spooned over the chicken and vegetables.
Recipe notes
Tips
- Keep the simmer gentle once the masa harina is added; a hard boil can make the sauce catch on the base of the pot.
- For the smoothest mole, blend the sauce for a full minute, then let it run another 30 seconds after it looks smooth.
- Food safety: make sure the chicken is piping hot all the way through before serving.
Substitutions
- Replace Chicken thighs with Chicken drumsticks for a similar rich, bone-in result; simmer until tender.
- Replace Epazote with Fresh coriander for a different but still fresh herbal finish.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat, adding a splash of water if the sauce has thickened, until piping hot. Freeze for up to 2 months; defrost overnight in the fridge before reheating.
