Soy-Glazed Salmon Bowl with Jasmine Rice and Pak Choi
Why this recipe works
- Fast, efficient cooking: The rice cooks while the salmon, aromatics and pak choi are prepared, keeping the whole bowl comfortably under 30 minutes.
- Simple but layered flavour: Soy sauce brings salt and umami, ginger and garlic add warmth, sesame oil adds nuttiness, and lime sharpens the finish.
- Balanced textures: Crisp salmon skin, tender fish, soft jasmine rice and lightly wilted pak choi give the bowl more contrast than a standard rice dish.

Ingredient notes
- Use skin-on salmon: Skin-on fillets are ideal because the skin can crisp in the pan while helping protect the flesh from drying out.
- Separate pak choi stems and leaves: The thicker stems need a brief head start in the wok, while the leaves only need enough time to wilt and stay bright.
- Check the soy sauce: Light soy sauce can vary in saltiness, so taste the glaze before adding any extra seasoning.
Texture tips
- For crisper salmon skin: Pat the salmon dry and avoid moving it too early; the skin will release more cleanly once it has properly seared.
- Keep the salmon tender: Cook the fish just until opaque and flaking, then glaze briefly so the soy mixture coats without drying the fillet.
- Keep the pak choi lively: Stir-fry it quickly over high heat so the stems stay lightly crisp and the leaves do not collapse.
Make-ahead tips
- Prepare the aromatics ahead: The ginger, garlic, spring onion and lime can be prepped in advance and kept chilled separately until cooking.
- Store for better leftovers: If making ahead, keep the rice, pak choi and salmon separate where possible so the fish stays in better condition.
- Reheat gently: Reheat the rice and pak choi until piping hot, then warm the salmon more gently to avoid drying it out. Add fresh lime after reheating.

Instructions
- Rinse the jasmine rice until the water runs mostly clear, then cook it in a saucepan with a tight-fitting lid according to the packet instructions. Leave it covered off the heat for 5 minutes, then fluff with a fork.
- Meanwhile, finely grate the ginger and finely chop the garlic. Trim the bok choy and slice it into bite-sized pieces, keeping the thicker stems separate from the leaves. Thinly slice the spring onion and cut the lime into wedges.
- Pat the salmon dry. Heat 1 tbsp sesame oil in a large frying pan over medium-high heat, then cook the salmon skin-side down for 4 to 5 minutes until the skin is crisp. Turn and cook for 2 to 3 minutes more, until just cooked through.
- Reduce the heat to medium and add the ginger and garlic to the pan, stirring for 30 seconds until fragrant. Pour in the light soy sauce and let it bubble for 1 to 2 minutes, spooning the glossy glaze over the salmon until it lightly thickens and coats.
- In a wok (or the same pan wiped out), heat the remaining 1 tbsp sesame oil over high heat. Stir-fry the bok choy stems for 1 minute, then add the leaves and cook for 1 to 2 minutes until just wilted and bright.
- Divide the rice between two bowls and top with the bok choy and salmon. Spoon over any remaining glaze, then finish with spring onion, roasted sesame seeds, and a squeeze of lime.
Recipe notes
Tips
- For the best sear, start the salmon in a hot pan and do not move it until the skin releases easily.
- Keep the glaze at a lively simmer, not a hard boil, so it turns glossy without reducing too far.
- If serving to anyone vulnerable, make sure the salmon is cooked until opaque and flakes easily all the way through.
Substitutions
- Replace light soy sauce with dark soy sauce for a deeper colour and slightly sweeter flavour, but use a little less as it can be stronger.
- Replace bok choy with broccoli for a similar quick stir-fry texture.
Storage
- Refrigerate up to 2 days
- Cool leftovers quickly, then refrigerate in a sealed container. Reheat the rice and bok choy in a microwave until piping hot; warm the salmon gently to avoid drying it out, and add fresh lime at the end.
