Modern Kimchi Fried Rice Bowl
Why this recipe works
- Fast weeknight cooking: Using cooked, cooled rice keeps the stir-fry quick and helps the grains heat through without becoming heavy.
- Big flavour from pantry staples: Kimchi, gochujang and soy sauce bring tang, chilli warmth and deep savoury flavour without a long cooking time.
- Balanced bowl texture: A fried egg adds richness, while spring onions and roasted sesame seeds bring freshness and crunch.

Adjust the heat
- For a milder bowl: Use a less spicy kimchi and reduce the gochujang, adding it gradually so the heat stays balanced.
- For more heat: Increase the gochujang slightly or finish the bowl with chilli oil or gochugaru if you like a stronger chilli kick.
- Keep the heat rounded: A softly cooked egg yolk helps mellow the chilli and gives the rice a richer, smoother finish.
Ingredient notes
- Choose flavourful kimchi: Well-fermented kimchi gives the fried rice a deeper tang and savoury complexity; fresher kimchi will taste lighter and crunchier.
- Chop the kimchi: Roughly chopping the kimchi helps it distribute evenly through the rice and caramelise more quickly in the pan.
- Use cooled rice: Cooled short-grain rice holds together just enough for a satisfying chew while still separating properly when stir-fried.
Common mistakes
- Using freshly cooked rice: Warm, moist rice can steam rather than fry, so cooled rice is the better choice for a glossy but separate texture.
- Cooking too gently: Once the rice goes in, keep the pan hot enough for quick stir-frying so the grains heat through without turning soft.
- Adding garlic too early: Garlic only needs a short time in the pan after the kimchi has started to caramelise; cooking it too long can make it bitter.
Serving ideas
- Add something crisp: Serve with cucumber salad, pickled radish or lightly seasoned greens to balance the richness of the rice and egg.
- Finish with freshness: Extra spring onions, sesame seeds or torn roasted seaweed work well as a final topping.

Instructions
- If the rice is clumped, break it up in a mixing bowl with your fingers so it will fry evenly. Roughly chop the kimchi, finely slice the spring onions, and finely chop the garlic.
- Heat 1 tbsp of the vegetable oil in a wok or large frying pan over medium-high heat. Add the kimchi and cook for 2 to 3 minutes until it smells fragrant and starts to caramelise at the edges, then stir in the garlic for 30 seconds.
- Add the rice and stir-fry for 3 to 4 minutes, pressing and tossing so the grains separate and heat through. Stir in the gochujang and light soy sauce, and cook for 1 to 2 minutes until the rice looks glossy and evenly coated.
- Push the rice to one side of the pan and add the remaining 1 tbsp vegetable oil to the empty side. Crack in the eggs and fry for 2 to 3 minutes until the whites are set and the yolks are still runny, or cook longer if you prefer.
- Divide the fried rice between two bowls. Top each with a fried egg, then finish with the spring onions and roasted sesame seeds.
Recipe notes
Tips
- For the best texture, use cooked rice that has been cooled so the grains stay separate in the pan.
- Keep the heat fairly high once the rice goes in, and stir-fry in quick motions so it warms through without steaming.
- Eggs should be cooked until the whites are fully set; if serving vulnerable groups, cook the yolks until firm.
Substitutions
- Replace short-grain rice with medium-grain rice for a slightly looser, less sticky fried rice.
- Replace light soy sauce with dark soy sauce for deeper colour and a slightly sweeter, richer flavour.
Storage
- Refrigerate up to 2 days
- Cool the fried rice quickly and refrigerate in a sealed container. Reheat in a hot frying pan with a small splash of water until piping hot; fry fresh eggs to serve.
