Thai Green Chicken Curry

Thai green chicken curry brings together a fragrant green chilli curry paste, creamy coconut milk and tender pieces of chicken in a sauce that is aromatic, gently spicy and rounded with sweetness, salt and lime. Aubergine softens into the curry as it simmers, while bamboo shoots add a clean, light crunch. Thai basil stirred through at the end keeps the flavour fresh and herbal rather than heavy. Served with jasmine rice, it makes a complete, comforting dinner with enough sauce to soak into the grains, and the seasoning can be adjusted at the table with extra lime or fish sauce to taste.

Why this recipe works

  • Aromatic curry base: Briefly cooking the garlic, ginger and green curry paste before adding the coconut milk helps release their fragrance and deepen the sauce.
  • Rich but balanced sauce: Coconut milk gives the curry body, while lime juice and fish sauce, if used, keep the finish bright and savoury rather than heavy.
  • Built for rice: The tender chicken, vegetables and coconut sauce are designed to be spooned over jasmine rice, which soaks up the curry without overpowering it.

Adjust the heat

  • For a milder curry: Use a little less green curry paste and add more lime or palm sugar at the end to round out the heat.
  • For more heat: Increase the curry paste slightly, cooking it briefly in the oil so the chilli and aromatics bloom properly.
  • Balance before serving: Taste after the aubergine is tender, then adjust with lime for brightness, palm sugar for softness and fish sauce for savoury depth.

Ingredient notes

  • Use chicken thighs for tenderness: Boneless, skinless thighs stay juicier than breast during simmering and suit the rich coconut sauce.
  • Thai basil matters: Thai basil brings a lightly aniseed, peppery aroma. Stir it in off the heat so it keeps its colour and fragrance.
  • Choose full-bodied coconut milk: A good coconut milk gives the sauce a smoother, richer texture and helps carry the curry paste’s aromatics.

Common mistakes

  • Boiling the coconut milk: Keep the curry at a gentle simmer once the coconut milk is added; a hard boil can make the sauce split.
  • Cooking the basil too long: Add Thai basil after taking the pot off the heat so it wilts gently without losing its fresh herbal character.
  • Using chicken breast without adjusting: If swapping in chicken breast, add it slightly later and simmer gently to reduce the risk of a dry texture.

Make-ahead tips

  • Good for meal prep: The curry can be cooled quickly and refrigerated in a sealed container, then reheated gently until piping hot.
  • Keep rice separate: Store the curry and jasmine rice separately so the rice does not absorb too much sauce as it sits.
  • Freeze without the rice: Freeze the curry on its own, then defrost overnight in the fridge and reheat slowly with a splash of water if the sauce has thickened.

  1. Rinse the jasmine rice until the water runs mostly clear. Tip into a saucepan with the water, bring to the boil, then cover and cook on the lowest heat for 12 minutes. Take off the heat and leave, covered, for 10 minutes to steam.
  2. Meanwhile, cut the chicken into bite-sized pieces. Peel and finely grate the garlic and ginger, then cut the aubergine into 2 cm chunks. Drain and rinse the bamboo shoots.
  3. Heat the sunflower oil in a large pot over medium heat. Add the garlic and ginger and cook for 30 seconds until fragrant, then stir in the green curry paste and cook for 1 minute to toast it. Pour in about a quarter of the coconut milk and stir until glossy and slightly thickened.
  4. Add the chicken and stir to coat in the curry base. Pour in the remaining coconut milk and bring to a gentle simmer. Cook for 8 minutes, stirring occasionally, until the chicken is turning opaque.
  5. Add the aubergine and bamboo shoots, then simmer for 10 to 12 minutes until the aubergine is tender and the chicken is cooked through. Stir in the palm sugar and fish sauce, if using, then squeeze in the lime juice to taste. Take off the heat and fold through the Thai basil so it stays bright and fragrant.
  6. Fluff the rice with a fork and divide between bowls. Spoon over the green curry and serve straight away.

Recipe notes

Tips

  • Keep the curry at a gentle simmer once the coconut milk is in; a hard boil can cause it to split.
  • If you are serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked until piping hot throughout.

Substitutions

  • Replace Chicken thighs with Chicken breast cutlets for a leaner curry; add them 2 minutes later to avoid drying out.
  • Replace Palm sugar with Light brown sugar for a similar sweetness.
  • Replace Fresh Thai basil with Fresh basil for a milder, more familiar finish.

Storage

  • Refrigerate up to 3 days
  • Cool the curry quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently in a saucepan over low heat until piping hot, adding a splash of water if it has thickened. Freeze the curry (without rice) for up to 2 months; defrost overnight in the fridge before reheating.
