Thai Chicken Lettuce Cups
Why this recipe works
- Sharp-savoury balance: Fish sauce brings salinity and umami, while lime and palm sugar keep the chicken filling bright rather than heavy.
- Fresh texture contrast: Warm minced chicken, crisp lettuce, soft herbs and coarse toasted rice powder give each cup crunch, fragrance and bite.
- Fast cooking: The filling cooks quickly in a wok or large frying pan, making the recipe practical for a fresh appetiser or light weeknight meal.

Adjust the heat
- For less heat: Use less dried chilli, or remove some of the seeds before crumbling it into the pan.
- For more heat: Add extra crumbled dried chilli with the garlic so the oil picks up more warmth before the chicken goes in.
- Keep it balanced: If the chilli tastes too sharp, adjust with a little more lime or palm sugar so the heat stays bright rather than harsh.
Authenticity notes
- Toasted rice powder matters: The coarse toasted rice powder is a defining larb-style element, adding a nutty aroma and subtle grit to the filling.
- Leaves for scooping: Crisp leaves and fresh herbs are a natural partner for larb-style fillings, keeping the dish fresh and easy to eat by hand.
- Lettuce-cup format: Serving the filling in individual romaine leaves turns the warm salad into a neat appetiser while keeping the key larb flavours intact.
Texture tips
- Keep the lettuce crisp: Wash and dry the leaves thoroughly, then spoon in the warm filling only when ready to serve.
- Avoid a paste-like filling: Break up the chicken as it cooks, but leave small uneven pieces for a better bite.
- Use sturdier leaves: Iceberg lettuce can replace romaine if you want extra crunch and firmer cups.
Make-ahead tips
- Prep ahead: Toast and pound the rice, wash the lettuce, and prepare the aromatics ahead of time to make assembly quicker.
- Store separately: Keep the chicken filling, lettuce leaves and herbs in separate containers so the leaves stay crisp.
- Reheat before serving: Warm the filling in a frying pan with a small splash of water until piping hot, then assemble with the cold lettuce and herbs.

Instructions
- Toast the jasmine rice in a dry frying pan over medium heat for 6 to 8 minutes, shaking often, until deep golden and nutty. Tip into a mortar and pestle and pound to a coarse powder, like gritty sand. Set aside.
- Separate the romaine lettuce into cup-like leaves, then rinse and spin or pat dry so they stay crisp. Thinly slice the shallots, finely chop the garlic, and crumble the dried red chilli. Zest 1 lime and squeeze both limes.
- Heat the vegetable oil in a wok or large frying pan over medium-high heat. Add the shallots and cook for 2 minutes until softened, then add the garlic and dried red chilli and cook for 30 seconds until fragrant. Add the minced chicken and stir-fry for 5 to 7 minutes, breaking it up, until cooked through with no pink remaining.
- Stir in the fish sauce, palm sugar, lime juice and lime zest, and cook for 1 to 2 minutes until glossy and well seasoned. Take off the heat and stir through most of the toasted rice powder, keeping a little back for sprinkling. Taste and adjust with a little more lime juice if you want it brighter.
- Roughly tear the fresh coriander, fresh mint and fresh basil. Spoon the warm chicken into the lettuce leaves and top with the herbs. Finish with the remaining toasted rice powder and serve straight away.

Tips
- For the best texture, keep the lettuce leaves cold and very dry, and spoon in the filling just before serving.
- If you are cooking for anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked until piping hot all the way through.
Substitutions
- Replace palm sugar with light brown sugar for a similar sweetness.
- Replace romaine lettuce with iceberg lettuce for extra crunch and sturdier cups.
- Replace fresh basil with fresh mint for a more mint-forward finish.
Storage
- Refrigerate up to 2 days
- Store the chicken filling in an airtight container in the fridge and keep the lettuce and herbs separate. Reheat the filling in a frying pan over medium heat with a small splash of water until piping hot, then assemble the cups just before eating.
