Papa a la Huancaína (Potatoes with Cheese Sauce)
Why this recipe works
- Smooth, creamy sauce: Crackers help thicken the blended cheese sauce while evaporated milk keeps it glossy and pourable.
- Rich but balanced: The mild heat and fruitiness of ají amarillo cut through the dairy-rich sauce without overwhelming the potatoes.
- Flexible serving temperature: The dish works well slightly warm, at room temperature or lightly chilled, making it practical for starters and shared plates.

Authenticity notes
- Classic presentation: Papa a la Huancaína is traditionally served with sliced potatoes over lettuce, topped with hard-boiled egg and black olives.
- Ají amarillo is key: Ají amarillo gives the sauce its recognised yellow colour, gentle heat and fruity chilli flavour.
Ingredient notes
- Choose waxy potatoes: Yukon Gold potatoes hold their shape well after boiling and give a tender, creamy bite.
- Watch salty cheese swaps: Feta can replace queso fresco, but it is saltier and tangier, so taste the sauce before adding extra salt.
Make-ahead tips
- Keep the components separate: Store the sauce, potatoes, lettuce and garnishes separately, then assemble just before serving to keep the lettuce crisp.
- Chill for a firmer sauce: A short chill helps the sauce set slightly, giving it a thicker texture on the potatoes.
Adjust the heat
- For a milder sauce: Reduce the ají amarillo paste and balance the sauce with a little more dairy if needed.
- For more heat: Blend in extra ají amarillo paste gradually, tasting as you go so the chilli stays balanced with the cheese.

Ingredients
Instructions
- Scrub the potatoes, then put them in a large pot and cover with cold water; add 1 tsp of the fine sea salt. Bring to the boil, then simmer for 15 to 20 minutes until a knife slides in easily. Drain and leave to cool until warm, then peel and slice into thick rounds.
- Meanwhile, place the eggs in a saucepan, cover with cold water, and bring to the boil. Simmer for 9 minutes, then drain and cool under cold running water. Peel and halve.
- Separate the romaine lettuce leaves, rinse, and pat dry. Arrange the leaves on a serving platter or individual plates.
- In a blender, combine the crackers, evaporated milk, queso fresco, ají amarillo paste, vegetable oil, the remaining 0.5 tsp fine sea salt, and the black pepper. Blend until completely smooth and creamy, scraping down as needed. Taste and adjust with a little more salt if you like.
- Lay the sliced potatoes over the lettuce, then spoon the sauce generously on top. Finish with the egg halves and black olives. Serve straight away, or chill for 15 minutes for a firmer, more set sauce.
Recipe notes
Tips
- For the smoothest sauce, blend for a full minute, then let it sit for 2 minutes so the crackers fully hydrate before giving it a final quick blend.
- If serving chilled, cover and refrigerate the sauce separately, then spoon over the potatoes just before serving so the lettuce stays crisp.
- Eggs should be cooked until the yolks are set; if you are pregnant, elderly, or immunocompromised, use eggs with a recognised food safety mark and serve the dish well chilled or promptly after cooking.
Substitutions
- Replace Queso fresco with Feta cheese for a saltier, tangier sauce.
- Replace Evaporated milk with Whole milk for a lighter sauce; blend a little longer to help it emulsify.
- Replace Salted crackers with Panko breadcrumbs for a slightly looser sauce with a more savoury, toasted note.
Storage
- Refrigerate up to 2 days
- Store the sauce, potatoes, and toppings separately in airtight containers for the best texture. Reassemble just before serving; if the sauce thickens in the fridge, blend briefly to loosen.
