Latin-Style Rice Meal Prep with Black Beans, Sweetcorn and Lime
Why this recipe works
- One-pot efficiency: The rice cooks directly in the tomato, onion and cumin base, so it absorbs flavour while keeping washing-up minimal.
- Built for meal prep: Beans, sweetcorn and rice hold well in containers, making this a reliable lunch option for several days.
- Bright finish: Lime zest and juice are added after cooking, keeping the flavour fresh rather than dull or heavy.

Texture tips
- Rinse and drain the rice well: Rinsing removes excess surface starch, helping the grains cook up lighter and less sticky.
- Keep the simmer gentle: A low, steady simmer lets the rice steam evenly without the bottom drying out before the grains are tender.
- Rest before fluffing: Leaving the pot covered off the heat helps the remaining steam finish the rice and settle the texture.
Make-ahead tips
- Portion after cooking: Divide the rice into containers once it has been fluffed and seasoned, so each portion has an even mix of rice, beans and sweetcorn.
- Reheat with moisture: Add a small splash of water before reheating to loosen the grains and stop the rice drying out.
- Freeze in portions: Cool quickly, freeze in individual servings, then defrost in the fridge before reheating until piping hot.
Ingredient notes
- Use long-grain rice: Long-grain white rice is the right choice here because it stays relatively separate and light after simmering.
- Adjust the lime at the end: Add most of the lime juice first, then taste and sharpen with more only if the rice needs extra brightness.
- Add coriander when serving: Fresh coriander gives the best lift when added just before eating rather than cooked into the pot.

Instructions
- Rinse the rice in a colander under cold water until the water runs mostly clear, then drain well. Dice the onion, finely chop the garlic, and dice the tomatoes. Zest the lime, then juice it; roughly chop the coriander and set it aside for serving.
- Heat the olive oil in a large pot over medium heat. Add the onion with a pinch of the salt and cook for 5 minutes until softened. Stir in the garlic and cumin and cook for 30 seconds until fragrant.
- Add the tomatoes and cook for 3 to 4 minutes until they start to break down and look saucy. Stir in the rice to coat in the tomato mixture. Add the water, remaining salt and the black pepper, then bring to the boil.
- Reduce to a low simmer, cover, and cook for 12 minutes. Scatter over the black beans and sweetcorn, cover again, and cook for 5 to 7 minutes until the rice is tender and the liquid is absorbed. If the pot looks dry before the rice is tender, add a splash of water and continue cooking for a couple of minutes.
- Take the pot off the heat and rest, covered, for 5 minutes. Fluff with a spoon, then stir through the lime zest and most of the lime juice. Taste and add a little more lime juice if you want it brighter.
- Portion into containers and cool to room temperature before sealing. When serving, top with the fresh coriander. Eat warm or at room temperature.
Recipe notes
Tips
- For the best texture, keep the simmer very low and leave the lid on as much as possible so the rice steams rather than dries out.
- If you are pregnant, elderly, immunocompromised, or serving young children, cool the rice quickly and refrigerate promptly; reheat until piping hot.
Substitutions
- Replace Fresh coriander with Fresh parsley for a different herbal finish.
- Replace Ground cumin with Curry powder for a warmer, more aromatic spice profile.
Storage
- Refrigerate up to 4 days
- Cool quickly, then refrigerate in sealed containers. Reheat in a saucepan with a splash of water over low heat, or in the microwave, stirring halfway, until piping hot. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
