Chicken Kabsa (Saudi-Style Spiced Rice with Almonds and Raisins)
Why this recipe works
- Layered spice and savoury depth: Browning the onions and chicken before simmering builds a savoury base, while the spices bloom briefly in the pot before the liquid is added.
- Rice cooked in the broth: The basmati absorbs the seasoned tomato, chicken and spice broth as it cooks, giving the grains more flavour than separately cooked rice.
- Balanced finish: Roasted almonds bring crunch and the golden raisins add small bursts of sweetness against the deeply savoury rice.

Authenticity notes
- Saudi-style rice cooking: Kabsa is closely associated with Saudi and Gulf cooking, with the rice commonly cooked in a spiced meat broth rather than prepared separately.
- Serving style: Serve the chicken over the fluffed rice on a large platter so the nuts and raisins are visible and easy to share.
Ingredient notes
- Dried black lime: Used whole, dried black lime gives the broth an earthy citrus note. Remove it before serving so its flavour stays aromatic rather than overpowering.
- Basmati rice: Long-grain basmati suits this style of steaming because it stays separate and fragrant when rinsed well and cooked gently.
- Nuts and raisins: Roasted almonds add crunch at the end, while golden raisins give a softer, sweeter contrast to the warm spices.
Timing notes
- Most active work happens early: The main hands-on steps are slicing, browning and building the broth; after the chicken returns to the pot, the recipe is mostly covered simmering and steaming.
- Rest before fluffing: The covered rest after cooking lets the rice finish steaming and settle, making it easier to fluff without breaking the grains.
Make-ahead tips
- Reheat gently: Warm leftovers covered over low heat with a little extra chicken stock until piping hot, which helps keep the rice from drying out.
- Freezer-friendly: Cooked kabsa can be frozen once cooled, then defrosted overnight in the fridge before reheating thoroughly.

Ingredients
Instructions
- Heat the ghee in a large, heavy pot over medium heat. Thinly slice the onion and add it with 1 tsp of the fine sea salt and the black pepper. Cook for 10 to 12 minutes, stirring often, until soft and lightly golden.
- Increase the heat to medium-high and add the chicken thighs, skin-side down. Cook for 5 to 7 minutes until the skin is well browned, then turn and cook for 3 minutes on the other side. Transfer the chicken to a plate.
- Crush the garlic and stir it into the pot for 30 seconds until fragrant. Stir in the ground cinnamon, ground cardamom and whole cloves for 30 seconds. Add the bay leaves, dried black lime, tomato passata and chicken stock, scraping up any browned bits.
- Bring to a gentle simmer, then return the chicken to the pot, skin-side up. Cover and simmer over low heat for 25 minutes, until the chicken is nearly cooked through and the broth is fragrant. Taste and season with the remaining 1 tsp fine sea salt if needed.
- Rinse the basmati rice under cold water until the water runs mostly clear, then drain well. Stir the rice into the pot around the chicken, keeping the chicken on top. Cover and cook over very low heat for 18 to 20 minutes, until the rice is tender and the liquid is absorbed.
- Turn off the heat and rest, covered, for 10 minutes to finish steaming. Remove the dried black lime, bay leaves and any whole cloves you spot. Fluff the rice, then stir through the golden raisin and roasted almonds and serve with the chicken on top.
Recipe notes
Tips
- For the best texture, keep the heat very low once the rice goes in so it steams gently rather than boiling.
- If you prefer softer raisins, stir the golden raisin into the pot for the final 5 minutes of cooking instead of at the end.
- Food safety: make sure the chicken is cooked until piping hot throughout, with no pink at the bone.
Substitutions
- Replace ghee with unsalted butter for a similar richness.
- Replace roasted almonds with pistachios for a more traditional nutty finish.
- Replace chicken thighs with chicken drumsticks for a similar cooking time and flavour.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in an airtight container for up to 3 days. Reheat in a covered saucepan with a splash of chicken stock over low heat until piping hot, or freeze for up to 2 months and defrost overnight in the fridge before reheating.
