Turkey Club Sandwich
Why this recipe works
- Crisp structure: Toasted bread and well-cooked bacon give the sandwich the crunch that defines a good club.
- Brightened richness: Dijon mustard cuts through the mayonnaise, bacon and turkey, keeping the filling from tasting heavy.
- Fast lunch assembly: Using sliced roast turkey keeps the cooking limited to crisping the bacon and toasting the bread.

Texture tips
- Keep the lettuce dry: Pat the romaine dry before layering so moisture does not soften the toast.
- Cook the bacon fully crisp: Let the bacon turn deep golden before removing it from the pan; slightly soft bacon can make the layers feel limp.
Ingredient notes
- Choose firm tomato: A ripe but firm tomato gives flavour without releasing too much juice into the sandwich.
- Use well-chilled turkey: Keep sliced roast turkey refrigerated until assembly, especially if serving anyone more vulnerable to foodborne illness.
Serving ideas
- Classic sides: Serve with crisps, chips, pickles or a simple salad for a straightforward deli-style lunch.
- Cut into quarters: Press gently, then slice with a bread knife for neat stacked quarters that are easier to handle.
Make-ahead tips
- Best served immediately: The sandwich is at its best while the toast is still crisp and the bacon has not softened.
- Prep components instead: If preparing ahead, keep the cooked bacon, sliced tomato, lettuce and spread separate, then assemble just before serving.

Ingredients
Instructions
- Cook the streaky bacon in a frying pan over medium heat for 6–8 minutes, turning, until deep golden and crisp. Transfer to a plate and let it cool slightly.
- Toast the white bread until golden. Lightly butter one side of each slice while still warm.
- Stir the mayonnaise and Dijon mustard together, then spread it over the unbuttered side of each slice. Grind over a little black pepper.
- Slice the tomato into even rounds. Pat the romaine lettuce dry if needed so the sandwich stays crisp.
- Build two sandwiches: on one slice of toast, layer turkey, lettuce and tomato, then add a second slice of toast. Add the bacon and a little more turkey, then top with the final slice of toast, buttered side facing out.
- Press gently, then cut each sandwich into quarters with a bread knife. Serve straight away while the toast is still crisp.
Recipe notes
Tips
- For neat quarters, chill the cooked bacon for 5 minutes so it firms up before stacking.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, make sure the bacon is thoroughly cooked and the turkey is well chilled and within its use-by date.
Substitutions
- Replace Dijon mustard with whole-grain mustard for a milder heat and a coarser texture.
- Replace romaine lettuce with iceberg lettuce for extra crunch.
Storage
- Refrigerate up to 1 days
- Best eaten immediately. If needed, wrap and refrigerate for up to 1 day; the bread will soften. Refresh by toasting the bread separately and rebuilding, or re-toast the assembled sandwich in a dry frying pan over low heat until warmed through.
