Cast-Iron Skillet Cornbread Chilli
Why this recipe works
- Deep chilli flavour: Browning the beef, softening the onion and briefly cooking the spices before simmering builds a richer, smokier base.
- Saucy base, tender topping: The chilli stays moist underneath while the cornbread rises into a soft, golden layer with lightly crisp edges.
- Skillet-to-oven cooking: The cast-iron pan cooks the chilli on the hob, then goes straight into the oven for the cornbread topping.

Adjust the heat
- For less heat: Replace some or all of the hot chilli powder with smoked paprika to keep the smoky flavour without as much fire.
- For extra heat: Add a little more hot chilli powder with the spices, then taste the chilli before topping with the cornbread.
- Keep the heat balanced: Season the chilli well before baking; the cornbread softens the spice level once the dish is served.
Texture tips
- Thicken before topping: Let the chilli reduce until slightly thickened so the cornbread sits on top rather than sinking into the sauce.
- Mix the batter lightly: Whisk the cornbread batter only until combined to keep the crumb tender rather than dense.
- Use a hot base: Spoon the batter over the hot chilli and spread it gently to the edges so it bakes evenly across the skillet.
Make-ahead tips
- Make the chilli base ahead: Cook the chilli base in advance, cool and refrigerate it, then bring it back to a hot simmer before adding the cornbread batter.
- Keep batter components separate: For the best rise, mix the dry and wet cornbread ingredients separately ahead of time, then combine just before baking.
- Reheat gently: Reheat portions at 180°C (355°F) until piping hot, adding a splash of water if the chilli underneath has thickened too much.

Instructions
- Heat the oven to 200°C (390°F). Put a cast-iron frying pan over medium heat and add the olive oil.
- Finely chop the onion and crush the garlic. Cook the onion with a pinch of the salt for 6 to 8 minutes until softened, then stir in the garlic for 30 seconds until fragrant.
- Add the minced beef and cook for 6 to 8 minutes, breaking it up with a wooden spoon, until browned with no pink remaining. Stir in the cumin, smoked paprika, hot chilli powder, black pepper and the remaining salt for 30 seconds.
- Tip in the canned tomatoes and water, scraping up any browned bits from the base of the pan. Bring to a gentle simmer, then cook for 20 minutes until slightly thickened.
- Stir in the kidney beans and simmer for 5 minutes. Taste and adjust seasoning if needed, keeping the heat at a steady simmer.
- In a mixing bowl, whisk together the cornmeal, plain flour, baking powder and salt. In a second bowl, whisk the buttermilk with the egg, then pour into the dry ingredients and whisk just until combined.
- Melt the butter and whisk it into the batter. Spoon the batter evenly over the hot chilli, then gently spread it to the edges without mixing it into the sauce.
- Bake for 18 to 22 minutes until the cornbread is risen and deep golden, and a skewer inserted into the cornbread comes out clean. Rest for 5 minutes before serving, spooning through the cornbread into the chilli below.
Recipe notes
Tips
- If your cast-iron pan is very full, place it on a baking tray before baking to catch any drips.
- For a neater slice, rest the baked chilli for 10 minutes so the cornbread sets slightly before serving.
- This dish contains egg; if serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs stamped with the British Lion mark or an equivalent pasteurised egg.
Substitutions
- Replace Buttermilk with Kefir for a similar tang and tender crumb.
- Replace Hot chili powder with Smoked paprika for a milder heat while keeping a smoky flavour.
- Replace Minced beef with Minced turkey for a lighter chilli.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat portions in a 180°C (355°F) oven for 15 to 20 minutes until piping hot, or microwave until hot throughout; add a splash of water if the chilli has thickened. Freeze for up to 2 months and defrost overnight in the fridge before reheating.
