Chicken Fajitas
Why this recipe works
- Fast skillet method: Thin strips of chicken and sliced vegetables cook quickly over medium-high heat, making the filling practical for a weeknight meal.
- Smoky, savoury base: Smoked paprika and cumin bloom briefly in the pan, coating the chicken and vegetables with warm, aromatic flavour.
- Fresh finish: Lime juice lifts the browned pan juices and keeps the rich tortilla filling bright rather than heavy.

Common mistakes
- Avoid crowding the chicken: Give the strips enough contact with the hot pan so they sear rather than steam.
- Watch the spices: Smoked paprika can catch quickly; lower the heat slightly if the pan looks dry before stirring in the spices.
- Do not overcook the chicken: Chicken thighs stay juicy, but they only need to be cooked through before being returned to the pan for the final coating.
Ingredient swaps
- Use chicken breast: Chicken breast works well for a leaner filling; cook it a little more carefully so it stays tender.
- Swap the topping: Greek yoghurt can replace soured cream for a lighter, tangy finish.
- Choose a neutral oil: Vegetable oil can be used instead of extra virgin olive oil if you prefer a cleaner searing flavour.
Make-ahead tips
- Slice ahead: The chicken, pepper and onion can be sliced in advance and kept chilled until ready to cook.
- Keep tortillas separate: Store the cooked filling separately from the tortillas so the tortillas stay soft and do not become damp.
- Reheat in a pan: Warm the filling in a frying pan with a squeeze of lime until piping hot, then heat the tortillas fresh.
Serving ideas
- Serve with rice or beans: Mexican-style rice, black beans or refried beans make the fajitas more substantial.
- Add fresh toppings: Avocado, shredded lettuce, salsa or pickled onions add freshness and contrast.
- Finish at the table: Extra lime wedges and coriander let everyone adjust brightness and freshness to taste.

Ingredients
Instructions
- Slice the chicken into thin strips. Deseed and slice the red pepper, then slice the onion. Finely chop the coriander and juice the lime.
- Heat 1 tbsp of the olive oil in a large frying pan over medium-high heat. Add the chicken and cook for 4 to 6 minutes, turning, until lightly browned and just cooked through. Tip onto a plate.
- Add the remaining 1 tbsp olive oil to the pan, then add the pepper and onion. Cook for 4 to 5 minutes, stirring, until softened with a little colour but still slightly crisp. Stir in the smoked paprika and ground cumin for 30 seconds until fragrant.
- Return the chicken to the pan and toss everything together. Squeeze over most of the lime juice and cook for 1 minute, scraping up any browned bits, until glossy and well coated. Taste and add more lime juice if you like it sharper.
- Warm the flour tortillas in a dry frying pan for 20 to 30 seconds per side, or until pliable. Spoon the chicken mixture into the tortillas, top with sour cream and scatter over the coriander. Serve straight away.
Recipe notes
Tips
- For the best sear, spread the chicken out in the pan and leave it undisturbed for the first minute before turning.
- If the pan looks dry when you add the spices, lower the heat slightly so the smoked paprika does not catch.
- If serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked all the way through with no pink remaining.
Substitutions
- Replace chicken thighs with chicken breast for a leaner fajita filling; reduce the cooking time slightly to keep it juicy.
- Replace sour cream with greek yogurt for a lighter topping with a similar tang.
- Replace extra virgin olive oil with vegetable oil for a more neutral flavour.
Storage
- Refrigerate up to 3 days
- Cool the chicken, peppers and onions quickly, then refrigerate in an airtight container. Reheat in a frying pan over medium heat with a squeeze of lime until piping hot; warm tortillas fresh. Freeze the filling only for up to 2 months and defrost overnight in the fridge before reheating.
