Roast Chicken with Herb Butter and Pan Drippings

A well-made roast chicken is one of the most useful centrepiece dinners: crisp, seasoned skin, juicy meat and a roasting tin full of savoury juices ready for gravy. Here, softened butter mixed with parsley, thyme, garlic and lemon zest is worked under the breast skin as well as over the outside, helping the flavour reach the meat while encouraging browning. Lemon in the cavity keeps the roast fragrant, and the browned pan drippings are turned into a simple glossy gravy with hot stock and flour. It is straightforward enough for a Sunday meal, but polished enough to serve with classic sides for a more generous dinner.

Why this recipe works

  • Seasoned from the inside out: Herb butter under the skin seasons the breast meat directly, while lemon, garlic and thyme add fresh savoury depth.
  • Crisp skin, juicy meat: Starting in a hot oven helps the skin colour quickly before the lower temperature finishes the chicken more gently.
  • Built-in gravy: The browned bits and juices in the roasting tin become a simple, glossy pan gravy with stock and flour.

Timing notes

  • Rest before carving: Let the chicken rest for 15 minutes so the juices settle back into the meat rather than running onto the board.
  • Serve while the gravy is fresh: The gravy is best served soon after simmering, when it is glossy and pourable. Loosen with a little hot stock if it thickens while standing.
  • Short prep, longer roast: Most of the time is hands-off roasting, so use the active prep time to dry the chicken well and work the butter evenly under the skin.

Texture tips

  • For crisper skin: Pat the chicken thoroughly dry before adding the butter; excess surface moisture slows browning.
  • Protect the breast meat: If the breast is browning too quickly, cover it loosely with foil towards the end of roasting while the thigh finishes cooking.
  • Use the thigh temperature: Check the thickest part of the thigh and cook until it reaches 75°C (165°F), which is a clearer guide than relying on colour alone.

Make-ahead tips

  • Make the herb butter ahead: Mix the butter, herbs, garlic and lemon zest in advance, then chill it and soften slightly before rubbing it under the skin.
  • Freeze cooked leftovers: Carved chicken and gravy can be frozen once cooled. Defrost overnight in the fridge before reheating.
  • Reheat gently: Warm leftovers in a 180°C (355°F) oven until piping hot, adding a little stock to loosen the gravy if needed.

  1. Heat the oven to 220°C (430°F). Pat the chicken dry all over, including the cavity, then set it in a roasting tin.
  2. Finely chop the parsley and thyme, then crush the garlic. Zest the lemon, then cut it in half.
  3. Mash the butter with the herbs, garlic, lemon zest, fine sea salt and black pepper. Loosen the skin over the breast with your fingers and push most of the herb butter underneath; rub the rest over the skin.
  4. Put the lemon halves in the cavity. Roast for 20 minutes, then reduce the oven to 190°C (375°F) and roast for 55 to 65 minutes more, until the juices run clear and the thickest part of the thigh reaches 75°C (170°F).
  5. Transfer the chicken to a board and rest for 15 minutes before carving. Tip the roasting tin slightly and spoon off all but about 2 tablespoons of fat, leaving the browned bits and juices behind.
  6. Set the roasting tin over a medium heat on the hob and whisk in the plain flour for 1 minute. Gradually whisk in the hot chicken stock, scraping up the sticky bits, then simmer for 3 to 5 minutes until glossy and lightly thickened; season with a little more fine sea salt and black pepper if needed.

Recipe notes

Tips

  • For the crispest skin, make sure the chicken is thoroughly dry before you add the herb butter.
  • If the skin is browning too quickly, loosely cover the breast area with foil for the last 20 to 30 minutes of roasting.
  • If you are serving anyone who is pregnant, elderly, or immunocompromised, ensure the chicken reaches 75°C (170°F) in the thickest part of the thigh.

Substitutions

  • Replace Fresh thyme with the same amount of Fresh parsley for a simpler herb butter.
  • Replace Lemon with 2 tbsp lemon juice stirred into the gravy at the end for a brighter finish.
  • Replace Chicken stock with water for a lighter gravy, but simmer for an extra 2 to 3 minutes to concentrate the flavour.

Storage

  • Refrigerate up to 3 days
  • Cool leftovers quickly, then refrigerate in a sealed container. Freeze carved chicken (and any gravy) for up to 2 months; defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot, adding a splash of chicken stock to loosen the gravy if needed.
