Slow-Roasted BBQ Pulled Pork

In American barbecue cooking, pulled pork centres on pork shoulder cooked low and slow until the connective tissue softens and the meat can be shredded into juicy strands. This oven-roasted version uses a smoky-sweet rub of paprika, brown sugar, cumin and chilli, then finishes the pork in a tangy tomato-and-cider-vinegar barbecue sauce made from the roasting juices, onions and garlic. The result is rich, tender meat with enough acidity to cut through the sweetness, ideal for piling into soft rolls, serving with slaw, or making ahead for an easy dinner.

Why this recipe works

  • Smoky, tangy depth: Smoked paprika, cumin, brown sugar and cider vinegar give the pork the sweet-savoury balance associated with barbecue-style pulled pork.
  • Tender, shreddable meat: Pork shoulder has enough fat and connective tissue to become soft and juicy during slow roasting.
  • Excellent made ahead: Cooling the shredded pork in its sauce helps keep it moist, making it well suited to reheating and batch cooking.

Timing notes

  • Mostly hands-off time: The active work is short; the long cooking time is mainly slow roasting, so plan the meal around the oven time rather than the prep.
  • Rest before shredding: Let the pork rest before pulling it apart so the juices settle and the meat shreds more cleanly.

Common mistakes

  • Do not stop too early: The pork should pull apart easily with a fork; if it resists, it needs more time in the oven.
  • Keep the sauce gentle: Simmer the barbecue sauce gently rather than boiling hard, as the sugar in the ketchup and brown sugar can catch.
  • Keep some roasting juices: Skim off excess fat, but leave enough roasting juices to give the sauce body and keep the shredded pork succulent.

Ingredient notes

  • Use pork shoulder: Boneless pork shoulder is ideal because it becomes tender and shreddable during long, slow cooking.
  • Smoked paprika matters: Smoked paprika gives the dish barbecue-style smokiness without needing a smoker.
  • Balance the sauce: Apple cider vinegar cuts through the sweetness of the ketchup and brown sugar; adjust seasoning at the end if the sauce tastes too flat.

Make-ahead tips

  • Make ahead in the sauce: Cool the shredded pork mixed with the sauce so it stays juicy in the fridge.
  • Reheat gently: Warm in a saucepan over low heat with a splash of water, or cover and heat in a 160°C (320°F) oven until piping hot.
  • Freeze in portions: Freeze cooled portions for up to 2 months, then defrost overnight in the fridge before reheating.

  1. Heat the oven to 150°C (300°F). Slice the onion into thick rounds and scatter them over the base of a roasting tin; lightly crush the garlic cloves and add them to the tin.
  2. In a small bowl, mix the brown sugar, smoked paprika, ground cumin, chilli flakes, fine sea salt and black pepper. Rub the mixture all over the pork, pressing it in so it adheres well.
  3. Sit the pork on top of the onions and garlic. Roast for 4 hours, turning the tin once halfway through, until the meat is very tender and pulls apart easily with a fork.
  4. Transfer the pork to a board and rest for 15 minutes. Tip the onions and garlic into a saucepan, then spoon off and discard most of the surface fat from the roasting juices, leaving a few tablespoons behind for flavour.
  5. Add the ketchup and apple cider vinegar to the saucepan and bring to a gentle simmer over medium heat. Cook for 8 to 10 minutes, stirring, until the sauce is glossy and slightly thickened; taste and adjust with a pinch more salt or pepper if needed.
  6. Shred the pork with two forks, discarding any large pieces of fat. Toss the shredded pork through the warm sauce until evenly coated, then serve straight away or cool for make-ahead.

Recipe notes

Tips

  • For the best texture, roast until the pork collapses easily when pressed and the fibres pull apart without resistance.
  • If making ahead, cool the pork in the sauce so it stays juicy, then reheat gently until piping hot.
  • Keep the sauce at a gentle simmer rather than a rapid boil so it thickens without catching.

Substitutions

  • Replace Apple cider vinegar with White wine vinegar for a slightly softer acidity.
  • Replace Ketchup with Tomato sauce for a less sweet, more tomato-forward barbecue sauce.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container. Reheat in a saucepan over low heat with a splash of water until piping hot, or cover and warm in a 160°C (320°F) oven. Freeze in portions for up to 2 months and defrost overnight in the fridge before reheating.
