Chana Masala (Spiced Chickpea Curry)

Chana masala brings chickpeas into a thick North Indian-style tomato and onion masala, seasoned with cumin, coriander, turmeric and garam masala. The sauce should be savoury, warmly spiced and spoonable rather than watery, with ginger, garlic and green chilli adding depth and gentle heat. Lemon juice and fresh coriander lift the finished curry, keeping it bright against the richness of the simmered tomatoes. Hearty enough for a simple dinner yet easy to adapt, it is especially good with basmati rice and also suits make-ahead cooking, as the flavours settle well in the fridge or freezer.

Why this recipe works

  • Layered masala base: Softening the onion before adding garlic, ginger, chilli and ground spices builds a savoury, aromatic foundation.
  • Bright finish: Lemon juice and fresh coriander lift the rich tomato gravy and balance the earthiness of the chickpeas.
  • Good for batch cooking: The curry keeps well in the fridge and freezes successfully, making it useful for make-ahead meals.

Adjust the heat

  • For less heat: Remove the chilli seeds, use a milder green chilli, or reduce the amount added to the masala.
  • For a hotter curry: Add extra green chilli or finish with chilli flakes, tasting as you go so the heat stays balanced.

Texture tips

  • For a creamier gravy: Mash some of the chickpeas into the sauce, then simmer briefly so the starch thickens the curry naturally.
  • For a thicker finish: Let the tomato base reduce until it looks glossy and concentrated before adding the chickpeas.

Make-ahead tips

  • Flavour improves overnight: The spices settle and deepen after chilling, so leftovers often taste even fuller the next day.
  • Reheat gently: Warm in a pot with a splash of water, stirring until the curry is piping hot throughout.
  • Freezer-friendly: Cool completely before freezing in sealed containers, then defrost overnight in the fridge before reheating.

Serving ideas

  • Serve with rice: Basmati rice is a classic pairing because it absorbs the thick, spiced gravy well.
  • Add flatbreads: Naan, roti or chapati work well for scooping up the chickpeas and sauce.
  • Finish fresh: Extra coriander and a final squeeze of lemon sharpen the curry just before serving.

  1. Finely chop the onion. Crush the garlic, finely grate the ginger, and finely chop the green chilli (remove the seeds for less heat).
  2. Heat the olive oil in a large pot over medium heat. Add the onion and salt, then cook for 8 to 10 minutes, stirring, until softened and lightly golden.
  3. Stir in the garlic, ginger and green chilli and cook for 1 minute until fragrant. Add the ground cumin, ground coriander and ground turmeric and cook for 30 seconds, stirring constantly.
  4. Add the canned tomatoes and bring to a gentle simmer. Cook for 10 to 12 minutes, stirring occasionally, until the sauce thickens and the oil starts to separate at the edges.
  5. Drain and rinse the chickpeas, then add them to the pot with the water. Simmer for 10 to 12 minutes until the chickpeas are tender and the curry is thick but spoonable.
  6. Stir in the garam masala and squeeze in the lemon juice to taste. Roughly chop the fresh coriander and scatter over the top, then serve hot.
