Lasagne al Forno (Classic Baked Lasagne)

Few baked pasta dishes are as recognisable as lasagne al forno: broad sheets of pasta layered with a slow-cooked meat ragù, creamy béchamel and a savoury grating of hard cheese. In this classic Italian-style version, minced beef is simmered with soffritto, tomato passata and red wine until rich and thick, then layered so the pasta absorbs the sauce as it bakes. The result should be bubbling at the edges, golden on top and generous through the middle, with enough resting time for clean slices. It is a practical make-ahead dinner for family meals, relaxed entertaining or portioning for the freezer.

Why this recipe works

  • Deep ragù flavour: A gentle simmer concentrates the beef, soffritto, wine and tomato into a rich sauce that can stand up to the pasta and béchamel.
  • Creamy, structured layers: Béchamel adds moisture and body between the pasta sheets, helping the lasagne bake into defined but tender layers.
  • Good for planning ahead: The assembled or baked lasagne holds well, making it practical for family dinners, entertaining or portioning for later.

Timing notes

  • Rest before slicing: Let the lasagne stand after baking so the béchamel and ragù settle; this helps the portions hold their shape.
  • Most of the time is passive: The longest stage is the ragù simmer and oven bake, so the active work is mainly chopping, stirring and assembling.

Ingredient notes

  • Use whole milk for béchamel: Whole milk gives the sauce a fuller texture and helps it coat the pasta without tasting thin.
  • Choose a good passata: Passata is central to the ragù, so a smooth, well-flavoured one gives the sauce better depth without needing extra additions.
  • Chop the soffritto finely: Small, even pieces of onion, carrot and celery soften into the ragù rather than standing out in the finished layers.

Make-ahead tips

  • Make the ragù in advance: The ragù can be cooked ahead and chilled, which makes assembly faster and allows the flavour to deepen.
  • Freeze cooked portions: Cool completely, wrap portions well and freeze for later meals; defrost in the fridge before reheating.
  • Reheat gently: Reheat covered in a 180°C (355°F) oven until piping hot throughout, uncovering near the end if the top needs refreshing.

Common mistakes

  • Using a thin ragù: If the ragù is watery, the layers can slide and the pasta may bake unevenly; simmer until it looks thick and glossy.
  • Letting the sauce catch: As the ragù reduces, stir more often and keep the heat gentle to prevent the base from scorching.
  • Cutting too soon: Slicing straight from the oven makes the layers collapse; a short rest gives a cleaner, neater serving.

  1. Heat the olive oil in a large pot over medium heat. Finely chop the yellow onion, carrot and celery, then add to the pot with 1 tsp of the fine sea salt and cook for 10 minutes until softened but not browned.
  2. Add the minced beef and cook for 8 to 10 minutes, breaking it up, until browned and any liquid has evaporated. Stir in the black pepper, then crush in the garlic and cook for 1 minute until fragrant.
  3. Pour in the red wine and simmer for 3 to 4 minutes until reduced by about half. Stir in the tomato passata, bring to a gentle simmer, then cook uncovered for 45 minutes, stirring occasionally, until thick and rich.
  4. While the ragù simmers, make the béchamel. Melt the butter in a saucepan over medium heat, stir in the plain flour, and cook for 2 minutes until it smells biscuity. Gradually whisk in the whole milk until smooth, then cook for 6 to 8 minutes, whisking, until thick enough to coat the back of a spoon; whisk in the ground nutmeg and the remaining 1 tsp fine sea salt.
  5. Heat the oven to 190°C (375°F). Spread a thin layer of ragù in the base of a baking dish, then add a layer of lasagna noodles, followed by more ragù and a layer of béchamel. Repeat the layers, finishing with béchamel on top.
  6. Finely grate the parmesan and scatter it over the top. Bake for 30 to 35 minutes until bubbling at the edges and golden on top. If it browns too quickly, loosely cover the top and continue baking until the pasta is tender.
  7. Rest the lasagne for 15 minutes before slicing so the layers set. Serve hot, spooning any sauce from the edges over each portion.

Recipe notes

Tips

  • For a deeper ragù, keep the simmer very gentle so it reduces slowly without catching; stir more often towards the end as it thickens.
  • If using lasagna noodles that need pre-cooking, soften them in hot water for a few minutes, then drain well before layering so the lasagne bakes evenly.
  • If serving vulnerable groups, ensure the lasagne is piping hot throughout before serving.

Substitutions

  • Replace red wine with water for a non-alcoholic ragù; simmer for an extra 5 minutes to concentrate the flavour.
  • Replace parmesan with grana-padano-cheese for a slightly milder, sweeter finish.
  • Replace butter with olive-oil for a lighter béchamel, keeping the same amounts.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then cover and refrigerate for up to 3 days. Freeze portions well wrapped for up to 2 months; defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot, about 20 to 25 minutes.
