Barbacoa de Borrego (Mexican Slow-Cooked Lamb in Chilli Broth)

In Mexican cooking, barbacoa refers to meat cooked slowly until exceptionally tender, often served with its aromatic juices as a consomé. This borrego version uses lamb shoulder, whose richness suits the deep, earthy flavour of guajillo and ancho chillies, cumin, oregano, garlic and bay. The result is shreddable meat with a savoury chilli broth that is glossy rather than heavy, lifted at the table with fresh lime. It works well as a generous dinner dish, with the consomé served alongside for spooning over the lamb or sipping between bites.

Why this recipe works

  • Deep chilli flavour: Browning the lamb and briefly toasting the chilli powders, cumin and oregano builds a savoury base before slow cooking.
  • Bright, balanced broth: Apple cider vinegar and lime cut through the richness of the lamb and keep the consomé from tasting heavy.
  • Excellent for preparing ahead: The lamb and consomé store well separately, making the dish practical for batch cooking or serving later.

Adjust the heat

  • For a milder broth: Use a little less chilli powder and let diners add extra lime at the table to soften the heat.
  • For more warmth: Increase the chilli character with extra ancho or guajillo, or add a hotter chilli powder if you prefer a sharper heat.
  • Balance before serving: Taste the reduced consomé before adding it back to the lamb; lime and salt will sharpen the flavour and bring the chilli into balance.

Timing notes

  • Most of the time is inactive: The browning, blending and reducing steps need attention, but the slow cooker handles the long tenderising stage.
  • Serve while the consomé is hot: Keep the shredded lamb moistened with a splash of hot broth so it stays juicy at the table.

Make-ahead tips

  • Store lamb and broth separately: Keeping the shredded lamb and consomé in separate containers helps the meat retain its texture and makes reheating easier.
  • Reheat gently: Warm the lamb with a little consomé over low heat until piping hot, then heat the remaining broth separately without boiling it hard.
  • Freezes well: Freeze cooled lamb and consomé in airtight containers, ideally in portions for easier reheating.

Ingredient notes

  • Guajillo and ancho chillies: Guajillo brings fruitiness and colour, while ancho adds a deeper, raisin-like earthiness; together they give the broth its rounded chilli flavour.
  • Lamb shoulder works well: Shoulder has enough connective tissue and fat to become tender during slow cooking without drying out.
  • Finish with lime: Adding lime at the table keeps the flavour fresh and lets each serving be adjusted to taste.

  1. Peel and roughly chop the onion. Peel the garlic cloves. Cut the lamb into large chunks and season with 1 tsp of the fine sea salt and the black pepper.
  2. Heat the olive oil in a frying pan over medium-high heat. Brown the lamb in batches for 2–3 minutes per side until well coloured, then transfer to the slow cooker.
  3. Lower the heat to medium and add the onion to the pan with a pinch of the remaining salt. Cook for 5–6 minutes until softened and lightly golden, then add the garlic and cook for 1 minute more.
  4. Stir in the guajillo chili powder, ancho chili powder, ground cumin and dried oregano and cook for 30 seconds until fragrant. Add the apple cider vinegar and water, scraping up any browned bits, then simmer for 2 minutes.
  5. Carefully blend the hot mixture until smooth. Pour it over the lamb, add the bay leaves, and stir to coat. Cover and cook on low for 3 hours, or until the lamb shreds easily.
  6. Transfer the lamb to a bowl and shred it, discarding any large pieces of fat. Strain the cooking liquid into a saucepan and discard the bay leaves. Simmer the liquid for 10–15 minutes until slightly reduced and glossy, then stir in the remaining 1 tsp fine sea salt if needed.
  7. Return a splash of the hot consomé to the shredded lamb to keep it juicy. Cut the lime into wedges. Serve the lamb with the remaining consomé on the side and squeeze over lime to taste.

Recipe notes

Tips

  • For a cleaner, richer consomé, chill the strained cooking liquid for 20 minutes, then lift off the solidified fat before reducing.
  • If serving children or anyone sensitive to heat, keep the lime wedges on the table and let each person balance the chilli with extra lime.
  • If you are pregnant, elderly, or immunocompromised, ensure the lamb is cooked until piping hot throughout before serving.

Substitutions

  • Replace apple cider vinegar with white wine vinegar for a slightly sharper tang.
  • Replace lime with lemon if that is what you have; add it at the table so the flavour stays bright.
  • Replace yellow onion with white onion for a slightly sweeter, cleaner base.

Storage

  • Refrigerate up to 3 days
  • Cool the lamb and consomé quickly, then refrigerate separately in airtight containers. Reheat the lamb with a splash of consomé in a saucepan over low heat until piping hot; warm the remaining consomé gently and do not boil hard.
