Zuccotto (Florentine Dome Cake)
Why this recipe works
- Signature dome shape: Lining a bowl with thin slices of sponge creates the recognisable domed structure and helps the cake hold together once chilled.
- Stable creamy filling: Ricotta and mascarpone give the centre enough richness and body to slice cleanly without needing a baked filling.
- Balanced richness: Dark chocolate and candied orange peel cut through the sweet dairy filling with bitterness, fragrance and chewy texture.
- Better after chilling: The resting time firms the cream and lets the sponge settle neatly into the mould, making serving easier.

Timing notes
- Chill until firm: The cake needs enough time in the fridge for the filling to set and the sponge shell to hold its shape when turned out.
- Overnight gives cleaner slices: For the neatest wedges, chill the zuccotto overnight and slice with a warmed, dried knife.
- Serve chilled: Keep it refrigerated until shortly before serving so the cream stays firm and the dome remains tidy.
Texture tips
- Smooth the cream first: Whisk the ricotta, mascarpone and icing sugar until smooth before folding in the chocolate and orange peel.
- Pack the sponge neatly: Overlap the sponge slices slightly and press them flush against the bowl so there are no gaps in the shell.
- Dust just before serving: Add the final cocoa coating at the end, as cocoa powder darkens and absorbs moisture in the fridge.
Ingredient notes
- Use good dark chocolate: A darker baking chocolate gives the filling a cleaner contrast against the sweet mascarpone and ricotta.
- Ricotta and mascarpone both matter: Ricotta keeps the filling light and slightly grainy, while mascarpone adds richness and structure.
- Candied peel adds chew: Candied orange peel gives a more noticeable texture than dried zest, which offers a cleaner citrus flavour.
Common mistakes
- Do not deflate the sponge: Fold the flour and cocoa in gently after whisking the eggs so the baked sponge stays light enough to line the mould.
- Bake the sponge fully: The sponge should spring back when lightly pressed; an underbaked sponge can tear or compress when sliced.
- Do not unmould too early: Turning it out before the filling is firm can cause the dome to slump and make slicing difficult.

Instructions
- Heat the oven to 180°C (355°F). Grease and line a 20 cm cake tin.
- Whisk the eggs, caster sugar and vanilla extract in a large bowl for 5 to 7 minutes until very pale, thick and ribboning. Sift in the plain flour and cocoa powder, then fold gently until no dry pockets remain.
- Pour the batter into the tin and bake for 18 to 22 minutes, until the sponge springs back when lightly pressed. Cool in the tin for 5 minutes, then turn out and cool completely.
- Once cool, cut the sponge into thin slices, then use them to line a 1.5 litre bowl, overlapping slightly and leaving enough sponge to cover the top. Press the slices gently so they sit flush against the bowl.
- In a bowl, whisk the ricotta, mascarpone, icing sugar and dried orange zest until smooth and thick. Finely chop the dark baking chocolate and the candied orange peel, then fold them through the cream.
- Spoon the filling into the sponge-lined bowl and level the top. Cover with the remaining sponge slices, pressing lightly to seal.
- Chill for at least 3 hours, or until firm enough to slice cleanly. Turn out onto a serving plate and dust all over with cocoa powder before cutting into wedges.
Recipe notes
Tips
- For the neatest slices, chill the zuccotto overnight and use a long knife warmed under hot water, wiping it dry between cuts.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs that are safe for light cooking and ensure the sponge is fully baked through.
Substitutions
- Replace Candied orange peel with Dried orange zest for a cleaner orange flavour, using 2 tsp Dried orange zest and omitting the peel.
- Replace Dark baking chocolate with Dark chocolate chips for quicker prep and a slightly softer texture in the filling.
Storage
- Refrigerate up to 3 days
- Keep covered in the fridge and serve chilled. Dust with cocoa powder just before serving, as it can darken and absorb moisture over time.
