Tacos de Suadero with Onion and Coriander
Why this recipe works
- Tender meat, crisp edges: Slow simmering softens the brisket, while a final sear gives the chopped beef the crisp, browned edges that make suadero-style tacos so satisfying.
- Fresh, sharp finish: Lime, salsa verde, onion and coriander cut through the richness of the beef and keep each taco bright rather than heavy.
- Easy to prepare ahead: The brisket can be cooked in advance, then chopped and crisped in a frying pan just before serving.

Texture tips
- For crispier beef: Spread the chopped brisket in an even layer and let it brown before stirring; moving it too often will stop the edges from crisping properly.
- Keep the meat juicy: If the beef starts to look dry during the final sear, add a small splash of the reserved cooking liquid and let it reduce around the meat.
Make-ahead tips
- Cook the brisket ahead: Braise the beef in advance and store it with a little cooking liquid. Chop and sear it shortly before serving for the best texture.
- Keep toppings separate: Store the beef, tortillas, onion, coriander, lime and salsa separately so the tortillas stay pliable and the toppings remain fresh.
- Reheat in a pan: Warm the beef in a frying pan with a little cooking liquid until piping hot, then continue cooking briefly to bring back the crisp edges.
Adjust the heat
- For a milder taco: Serve the salsa verde on the side or choose a milder version so each person can control the heat.
- For more heat: Use a hotter salsa verde at the table, adding it after the lime so the chilli stays sharp and fresh.
Serving ideas
- Finish simply: White onion, coriander and lime are enough to balance the rich beef without covering up the crisp, savoury flavour.
- Good sides: Serve with refried beans, grilled spring onions or a simple cabbage slaw for a fuller meal.

Ingredients
Instructions
- Season the brisket all over with the fine sea salt and ground cumin. Heat 1 tbsp of the vegetable oil in a large pot over medium-high heat, then brown the brisket for 3 to 4 minutes per side until well coloured. Transfer to a plate.
- Halve the white onion and thinly slice one half; set it aside for serving. Roughly chop the remaining onion half and add it to the pot with the garlic, cooking for 2 minutes until fragrant. Pour in the beef stock, add the bay leaves, and return the brisket (and any juices) to the pot.
- Bring to a gentle simmer, then cover and cook on low for 2 hours, turning the brisket once, until very tender. Lift the brisket out and rest for 10 minutes. Skim any excess fat from the surface of the cooking liquid, then discard the bay leaves.
- Finely chop the brisket into small pieces. Heat the remaining 1 tbsp vegetable oil in a large frying pan over medium-high heat, then add the chopped brisket in an even layer. Sear for 6 to 8 minutes, stirring occasionally, until crisp at the edges; splash in a few spoonfuls of the cooking liquid if it looks dry.
- Warm the corn tortillas in a dry frying pan for about 20 to 30 seconds per side until pliable and lightly toasted. Finely chop the fresh coriander. Cut the limes into wedges.
- Fill each tortilla with the suadero-style brisket, then top with the reserved sliced white onion and fresh coriander. Finish with a squeeze of lime and a spoonful of salsa verde. Serve straight away while the meat is still crisp at the edges.
Recipe notes
Tips
- For the best crisp edges, spread the chopped brisket in a single layer and let it sit undisturbed for 1 to 2 minutes before stirring.
- If serving children, offer the salsa verde on the side so everyone can adjust the heat and tang to taste.
Substitutions
- Replace Beef stock with water for a lighter braise, then season a little more with Fine sea salt at the end.
- Replace Salsa verde with a milder Salsa verde if you prefer less heat.
Storage
- Refrigerate up to 3 days
- Store the cooked brisket (without tortillas or toppings) in an airtight container. Reheat in a frying pan with a splash of the cooking liquid until piping hot, then crisp again briefly before serving; freeze for up to 2 months and defrost overnight in the fridge.
