Lamb Seekh Kebabs with Mint Chutney

Seekh kebabs are a much-loved South Asian skewer dish, recognised for their finely seasoned minced meat moulded around skewers and grilled until browned, smoky and juicy. In this version, lamb is mixed with grated onion, garlic, ginger, green chilli and warm spices, then worked until tacky so it holds its shape on the grill. The result is savoury, aromatic and lightly fiery, with a firm but tender texture. A blended mint, coriander, yoghurt and lime chutney brings freshness and tang, making the kebabs well suited to dinner with flatbreads, rice, salad or a larger sharing spread.

Why this recipe works

  • Bold spice base: Ginger, garlic, garam masala, cumin and coriander season the lamb thoroughly without needing a long marinade.
  • Cooling contrast: The mint, coriander, yoghurt and lime chutney cuts through the richness of the lamb with freshness and acidity.
  • Skewer-friendly texture: Mixing the mince until tacky helps the kebabs hold together and cling to the skewers as they grill.

Adjust the heat

  • For less heat: Use less green chilli, or remove the seeds and membrane before chopping.
  • For more heat: Add extra green chilli to the lamb mixture, or serve sliced chillies alongside for individual adjustment.
  • Keep the chutney bright: A sharp, herby chutney helps balance the chilli and the richness of the lamb.

Texture tips

  • Mix until tacky: Work the mince until it feels sticky and cohesive; this gives the kebabs structure on the grill.
  • Drain the onion well: Squeezing out the grated onion stops the mixture becoming too loose and soft.
  • Watch the final minutes: Turn the kebabs regularly and stop cooking once they feel firm and the juices run clear, as minced lamb can dry out if left too long.

Make-ahead tips

  • Shape ahead: The seasoned lamb mixture can be shaped and chilled earlier the same day; keep it covered and cold until grilling.
  • Keep chutney separate: Store the chutney apart from the kebabs so it stays fresh and does not cool the meat before serving.
  • Reheat thoroughly: Reheat cooked kebabs on a hot grill or in a 200°C (390°F) oven until piping hot, then add the chutney after reheating.

Ingredient notes

  • Choose lamb with some fat: Minced lamb with a little fat gives juicier kebabs; very lean mince can cook up dry.
  • Use fresh herbs for the chutney: Fresh mint and coriander are important for the chutney’s colour and bright flavour; dried herbs will not give the same result.

Instructions

  1. If using wooden skewers, soak them in water for 20 minutes. Finely grate the onion, then squeeze out as much liquid as you can. Finely grate the garlic and ginger, and finely chop the green chilli.
  2. In a mixing bowl, combine the minced lamb with the grated onion, garlic, ginger, green chilli, garam masala, ground cumin, ground coriander and fine sea salt. Mix vigorously for 2 to 3 minutes until the mixture becomes tacky and holds together. Cover and chill for 10 minutes to firm up.
  3. Heat the grill to medium-high and clean the grates. Divide the lamb mixture into 6 portions, then press and mould each portion around a skewer into a long, even sausage shape. Smooth any cracks so they do not split on the grill.
  4. Grill the kebabs for 10 to 12 minutes, turning every 2 to 3 minutes, until browned all over and cooked through. They should feel firm and the juices should run clear. Rest for 2 minutes while you finish the chutney.
  5. For the chutney, blend the fresh mint, fresh coriander, yogurt and the juice of the lime until smooth and spoonable. Taste and add a pinch more fine sea salt if needed. Serve the kebabs hot with the mint chutney alongside.

Recipe notes

Tips

  • Squeezing the grated onion well keeps the kebabs from turning soft and helps them cling to the skewers.
  • If the kebabs start to catch, move them to a slightly cooler part of the grill and turn more often to brown evenly.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised yogurt.

Substitutions

  • Replace yogurt with greek-yogurt for a thicker, richer chutney.
  • Replace green chili pepper with jalapeno-pepper for a similar heat level and flavour.

Storage

  • Refrigerate up to 3 days
  • Cool the cooked kebabs quickly, then refrigerate in a sealed container. Reheat on a hot grill or in a 200°C (390°F) oven until piping hot. The chutney keeps for up to 2 days in the fridge; freeze kebabs only, well wrapped, for up to 2 months.
