Daoud Basha (Lebanese Meatballs in Tamarind Tomato Sauce)

Daoud Basha is a Lebanese meatball dish where small, warmly spiced beef kofta-style balls are simmered in a tomato-based sauce until tender. Tamarind gives the sauce its distinctive gentle sourness, cutting through the richness of the meat while keeping the dish savoury rather than sharp. Onion, garlic, allspice, cinnamon and parsley bring depth and freshness, and browning the meatballs first adds colour and flavour to the pan sauce. Served over basmati rice, it makes a satisfying dinner with enough sauce to soak into every grain.

Why this recipe works

  • Built-in savoury depth: Browning the meatballs first creates caramelised flavour that carries into the tomato sauce.
  • Balanced tang: Tamarind sharpens the passata and cuts through the richness of the beef without making the sauce heavy.
  • Good for preparing ahead: The meatballs and sauce hold well in the fridge or freezer, making the dish practical for batch cooking.

Ingredient notes

  • Tamarind paste: Tamarind paste gives the sauce its recognisable sweet-sour edge; stir it in fully so the acidity is evenly distributed.
  • Grated onion: Grating the onion helps it blend into the meat mixture, adding moisture and flavour without large pieces.
  • Fresh parsley: Fresh parsley works best here, adding a clean herbal finish to the rich sauce.

Common mistakes

  • Crowding the pan: Brown the meatballs in batches so they colour properly rather than steaming.
  • Boiling the sauce too hard: Keep the sauce at a gentle simmer once the tamarind is added; high heat can make the sauce taste harsh and the meatballs firmer.
  • Compacting the meatballs: Mix until the seasoning is evenly distributed, but avoid excessive handling, which can make the meatballs dense.

Make-ahead tips

  • Shape ahead: The meatballs can be shaped in advance and kept chilled until cooking.
  • Freeze without rice: Freeze the cooked meatballs and sauce without the rice for the best texture when reheated.
  • Reheat gently: Warm the meatballs and sauce in a saucepan with a splash of water until piping hot throughout.

  1. Finely grate the onion into a mixing bowl and finely grate the garlic. Finely chop most of the parsley, reserving a small handful for serving.
  2. Add the minced beef to the bowl with the allspice, ground cinnamon, 1.5 tsp fine sea salt, black pepper and the chopped parsley. Mix well, then shape into 18 to 20 small meatballs.
  3. Heat the olive oil in a large frying pan over medium-high heat. Brown the meatballs in batches for 5 to 7 minutes total, turning until well coloured; they do not need to be cooked through yet.
  4. Lower the heat to medium and carefully pour in the tomato passata and 250 ml water, scraping up any browned bits. Stir in the tamarind paste until fully dissolved, then bring to a gentle simmer.
  5. Return all the meatballs to the pan, cover and simmer gently for 18 to 20 minutes, stirring once or twice, until the meatballs are cooked through and the sauce has thickened slightly. Taste and adjust seasoning with a pinch more fine sea salt if needed.
  6. Meanwhile, rinse the basmati rice until the water runs mostly clear, then put it in a saucepan with 600 ml water and 0.5 tsp fine sea salt. Bring to the boil, cover, reduce to low and cook for 10 minutes, then rest off the heat for 10 minutes before fluffing with a fork.
  7. Serve the meatballs and sauce over the rice. Finish with the reserved parsley.

Recipe notes

Tips

  • Keep the sauce at a gentle simmer once the tamarind is added; a hard boil can make it taste harsh and may toughen the meatballs.
  • If you are serving vulnerable groups, make sure the meatballs are piping hot all the way through before serving.

Substitutions

  • Replace Fresh parsley with Fresh mint for a different, brighter finish.
  • Replace Tomato passata with canned-crushed-tomatoes for a chunkier sauce.

Storage

  • Refrigerate up to 3 days
  • Cool the meatballs and sauce quickly, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water until piping hot; freeze the sauce and meatballs (without rice) for best texture.
