Lamb Rogan Josh with Saffron Rice

Rogan josh is a deeply savoury lamb curry associated with Kashmiri cooking, recognised for its red hue, aromatic spices and slow-cooked tenderness rather than sharp heat. In this version, boneless lamb shoulder is marinated in spiced yoghurt, then gently braised with browned onions, cardamom, cloves, ginger, garlic and tomatoes until the sauce reduces to a glossy coating. The saffron basmati rice keeps the meal fragrant and complete, with separate, buttery grains that suit the rich curry. It is a good choice when you want a make-ahead dinner with depth, warmth and a proper slow-simmered finish.

Why this recipe works

  • Layered spice base: Browning the onions slowly before adding whole spices, garlic and ginger gives the sauce depth before the lamb begins to braise.
  • Tender lamb: Lamb shoulder benefits from a long, gentle simmer, breaking down into succulent pieces while flavouring the sauce.
  • Balanced richness: Yoghurt and tomatoes bring acidity that balances the ghee, lamb and warming spices.

Adjust the heat

  • For less heat: Use a mild chilli powder in place of Kashmiri chilli for a gentler curry, though the colour will be less vivid.
  • For more warmth: Increase the chilli gradually or add a hotter chilli powder alongside the Kashmiri chilli if you prefer a sharper heat.
  • Keep the spice rounded: Let the curry simmer fully before making final seasoning adjustments; the heat softens as the sauce reduces and the lamb enriches it.

Timing notes

  • Mostly slow simmering: The hands-on work is concentrated at the start; the main time commitment is the gentle braise that tenderises the lamb.
  • Finish the rice near the end: Start the saffron rice as the curry reduces so the grains stay separate and fresh when served.
  • Let the rice stand: Keeping the rice covered off the heat allows the steam to finish cooking the grains without making them wet.

Ingredient notes

  • Choose lamb shoulder: Boneless lamb shoulder is well suited to braising because it becomes tender during slow cooking and gives the sauce body.
  • Kashmiri chilli matters: Kashmiri chilli provides colour and moderate warmth rather than aggressive heat, which suits the rounded character of rogan josh.
  • Use plain yoghurt: Plain yoghurt keeps the marinade savoury and helps the spices cling to the lamb before cooking.

Make-ahead tips

  • Better after resting: The curry can be made ahead; the spices settle and the sauce thickens slightly after chilling.
  • Store rice separately: Keep the saffron rice in a separate container so it reheats evenly and does not absorb too much curry sauce.
  • Reheat gently: Warm the curry over a low heat with a splash of water if needed, stirring until piping hot throughout.

  1. In a bowl, mix the yogurt with the ground Kashmiri chili, ground cumin, ground coriander and 1 tsp of the fine sea salt. Cut the lamb into bite-sized pieces, add to the spiced yogurt, and turn to coat well. Set aside while you prepare the onions, garlic and ginger.
  2. Finely slice the onion. Crush the garlic to a paste and finely grate the ginger. Keep them separate so you can add them in stages.
  3. Heat the vegetable oil and 2 tbsp ghee in a dutch oven over medium heat. Add the onion with a pinch of the remaining salt and cook for 12 to 15 minutes, stirring often, until deep golden. This slow browning is key for a glossy, rich sauce.
  4. Add the cardamom pods and whole cloves and cook for 1 minute until fragrant. Stir in the garlic and ginger and cook for 1 to 2 minutes, keeping the heat moderate so they do not catch. Scrape the base of the pan as you stir.
  5. Add the lamb and all the spiced yogurt, then cook for 6 to 8 minutes, stirring, until the yogurt looks absorbed and the lamb begins to lose its raw colour. Tip in the canned chopped tomatoes and cook for 3 minutes. Pour in 500 ml water and bring to a gentle simmer.
  6. Cover and simmer on low for 70 to 80 minutes, stirring every 15 minutes, until the lamb is very tender. Uncover for the final 10 to 15 minutes to reduce the sauce until glossy and coating the meat. Taste and season with the remaining fine sea salt if needed.
  7. While the curry finishes, rinse the basmati rice in cold water until the water runs mostly clear. In a saucepan, warm a little of the 600 ml water and steep the dried saffron threads for 5 minutes. Add the rice, remaining water, 1 tsp fine sea salt and 1 tbsp ghee, then bring to the boil.
  8. Cover, reduce to low, and cook the rice for 10 minutes. Remove from the heat and leave covered for 10 minutes, then fluff with a fork to separate the grains. Serve the lamb rogan josh with the saffron rice.

Recipe notes

Tips

  • Keep the curry at a gentle simmer rather than a hard boil so the lamb stays succulent and the sauce reduces smoothly.
  • If the sauce looks like it is catching during the long simmer, add a splash of water and scrape the base of the pan to loosen any caramelised bits.
  • If you are serving vulnerable groups, use pasteurised yogurt and ensure the curry is simmered until piping hot throughout.

Substitutions

  • Replace ghee with vegetable oil for a similar cooking method with a slightly lighter flavour.
  • Replace ground Kashmiri chili with mild chili powder for less heat and a less vivid red colour.

Storage

  • Refrigerate up to 3 days
  • Cool the curry quickly, then refrigerate in a sealed container. Reheat gently in a saucepan with a splash of water until piping hot; store rice separately and reheat with a tablespoon of water in a covered saucepan on low until hot.
