Smoky Black Bean and Sweet Potato Bowl

Roasted sweet potato bowls are the kind of warm, colourful lunch that works because every component brings something different: caramelised edges from the potato, earthy black beans, sweet pops of corn and crisp red pepper. Here the seasoning leans smoky rather than spicy, with smoked paprika and cumin giving the bowl a toasty depth, while a lime yoghurt sauce keeps it fresh and spoonable. Finished with coriander, it is a vegetarian bowl with plenty of texture and enough substance for a satisfying everyday meal.

Why this recipe works

  • Good texture contrast: Tender roasted sweet potato, soft beans, crisp pepper and sweetcorn keep the bowl varied rather than one-note.
  • Bright, balanced finish: The lime yoghurt cuts through the smoky spices and naturally sweet vegetables with a cool, tangy finish.
  • Easy to prep ahead: The roasted sweet potato, bean mixture and sauce can be stored separately, then assembled when ready to eat.

Texture tips

  • Roast for browned edges: Let the sweet potato cook until the edges are well browned; that caramelisation adds both flavour and a firmer bite.
  • Keep the sauce separate: Add the lime yoghurt just before serving so the roasted vegetables and beans stay warm and defined.

Make-ahead tips

  • Store in separate containers: Keep the roasted sweet potato, bean mixture and yoghurt sauce apart in the fridge for the best texture.
  • Reheat gently: Warm the sweet potato and beans until piping hot, either in a saucepan or in a 180°C (355°F) oven, then add the cold sauce.

Ingredient swaps

  • Make the sauce dairy-free: Use soy yoghurt in place of Greek yoghurt for a similar spoonable sauce with a plant-based base.
  • Use lemon instead of lime: Lemon gives a slightly softer citrus flavour if lime is not available.

  1. Heat the oven to 220°C (430°F). Peel the sweet potato and cut into bite-size chunks.
  2. Tip the sweet potato onto a baking tray and toss with the olive oil, smoked paprika, ground cumin and fine sea salt. Roast for 25 to 30 minutes, turning once, until tender and browned at the edges.
  3. Meanwhile, drain and rinse the black beans. Warm them in a small saucepan over a low heat with a splash of water, stirring, until hot through.
  4. Cut the red pepper into small pieces. Add the sweet corn kernels to the pan with the beans for the last 2 minutes, just to take the chill off.
  5. Finely chop the fresh coriander. In a bowl, mix the greek yogurt with the juice from the lime and a pinch of the fine sea salt until smooth and spoonable.
  6. Divide the roasted sweet potato between two bowls and top with the warm black bean and sweetcorn mixture. Add the red pepper, drizzle over the lime yoghurt sauce, and finish with the coriander.

Recipe notes

Tips

  • For deeper flavour, let the sweet potato roast until the edges are well browned, then toss once more on the tray before serving.
  • If serving to anyone vulnerable to foodborne illness, use pasteurised greek yogurt and keep the bowl piping hot if you are not eating it straight away.

Substitutions

  • Replace greek yogurt with soy-yogurt for a dairy-free sauce.
  • Replace lime with lemon for a slightly softer citrus flavour.

Storage

  • Refrigerate up to 3 days
  • Store the roasted sweet potato and the bean mixture in separate airtight containers in the fridge. Keep the yoghurt sauce separate and add just before serving; reheat the sweet potato and beans in a 180°C (355°F) oven or a saucepan until piping hot.
