Keema Pav (Spiced Minced Lamb with Bread Rolls)

Keema pav brings together a richly spiced minced lamb curry and soft buttered bread rolls made for scooping. The keema is cooked down with onion, tomato, ginger, garlic, green chilli and ground spices until thick, savoury and spoonable, with garam masala added at the end for warmth and fragrance. A squeeze of lime and fresh coriander lift the richness of the lamb, keeping the dish bright rather than heavy. Served with glossy toasted buns, it is informal, satisfying and well suited to lunch, a relaxed dinner or sharing at the table.

Why this recipe works

  • Layered spice base: Softened onions, jammy tomatoes, ginger, garlic and ground spices create a savoury base before the lamb is added.
  • Fresh finish: Lime juice and fresh coriander cut through the richness of the minced lamb and buttered rolls.
  • Built for scooping: Reducing the keema until thick makes it easy to serve with toasted buns, flatbreads or rice.

Adjust the heat

  • For less heat: Remove the seeds from the green chilli before chopping, or use a smaller amount to keep the flavour without as much sharp heat.
  • For more heat: Use an extra green chilli or leave the seeds in, then balance the finished keema with lime juice and coriander.

Texture tips

  • For a scoopable keema: Keep the simmer gentle and reduce until the mixture is thick, glossy and no longer watery.
  • Toast the buns fresh: Butter and toast the rolls just before serving so they stay glossy at the edges but still hold their shape for scooping.

Ingredient notes

  • Use ripe tomatoes: Ripe tomatoes break down more easily into the onion base and give the keema a fuller, rounder flavour.
  • Add garam masala late: Stirring in the garam masala at the end preserves its warmer, more aromatic notes.
  • Lamb brings richness: As the minced lamb cooks, its rendered fat helps carry the spices and gives the curry its characteristic depth.

Make-ahead tips

  • Cook the keema ahead: The lamb mixture can be cooled, refrigerated and reheated later with a splash of water to loosen it.
  • Freeze the filling only: Freeze the cooked keema rather than the buns, then defrost overnight in the fridge before reheating until piping hot.
  • Toast buns to order: Keep the bread separate and butter-toast it just before serving for the best texture.

  1. Finely chop the onion and green chilli. Grate the ginger and crush the garlic. Dice the tomatoes and roughly chop the fresh coriander.
  2. Heat the sunflower oil in a large frying pan over medium heat. Add the onion with a pinch of salt and cook for 8 to 10 minutes, stirring, until soft and lightly golden.
  3. Stir in the green chilli, ginger and garlic and cook for 1 minute until fragrant. Add the tomatoes and cook for 6 to 8 minutes, stirring, until they break down into a thick, jammy base.
  4. Add the ground cumin and ground coriander and cook for 30 seconds. Add the minced lamb and cook for 6 to 8 minutes, breaking it up with a wooden spoon, until no longer pink and the fat starts to render.
  5. Add 150 ml water and bring to a gentle simmer. Cook for 10 to 12 minutes, stirring occasionally, until the keema is thick and spoonable and the oil begins to separate at the edges.
  6. Turn the heat to low and stir in the garam masala. Squeeze in the lime juice, then fold through most of the fresh coriander, saving a little for serving. Taste and adjust with a little more salt if needed.
  7. Split the burger buns and toast them cut-side down in a clean pan over medium heat. Add the unsalted butter and let it melt, then turn the buns to coat the cut sides until glossy and lightly golden.
  8. Spoon the keema into bowls and scatter over the remaining fresh coriander. Serve immediately with the buttered buns for scooping.

Recipe notes

Tips

  • For a thicker, more scoopable keema, keep the simmer gentle and stir often in the last few minutes so the liquid reduces without catching.
  • If you prefer a milder heat, remove the seeds from the green chilli before chopping.
  • If serving vulnerable groups, ensure the minced lamb is cooked until piping hot throughout with no pink remaining.

Substitutions

  • Replace the burger bun with brioche bun for a softer, slightly sweeter pav-style roll.
  • Replace sunflower oil with ghee for a richer, more traditional flavour.

Storage

  • Refrigerate up to 3 days
  • Cool the keema quickly, then refrigerate in a sealed container for up to 3 days. Reheat in a pan with a splash of water, stirring, until piping hot; toast and butter the buns fresh. Freeze the keema (not the buns) for up to 2 months and defrost overnight in the fridge before reheating.
