Chicken Biryani Lunch Bowl

Biryani brings together fragrant basmati rice, spiced meat and aromatic garnishes in a layered rice dish closely associated with Indian and wider South Asian cooking. In this lunch bowl version, boneless chicken thighs are coated in yoghurt, ginger, garlic, chilli, garam masala and turmeric, then simmered with golden onions until glossy and well seasoned. The rice is kept slightly firm before steaming over the chicken, so the grains stay separate while absorbing the savoury spices. Fried onion, fresh coriander, mint and lemon add lift, making it satisfying enough for a proper lunch yet easy to portion for leftovers.

Why this recipe works

  • Layered flavour: The chicken simmers with yoghurt, ginger, garlic, chilli and spices before the rice is added, creating a concentrated base for the final steam.
  • Fluffy layered rice: Par-boiling the basmati before steaming helps the grains finish gently over the chicken without turning heavy or mushy.
  • Freshness and lift: Lemon, coriander and mint cut through the richness of the ghee and yoghurt, keeping the bowl aromatic rather than dense.

Adjust the heat

  • For a milder bowl: Remove the seeds from the green chilli before slicing, or use a smaller amount of chilli in the marinade.
  • For more heat: Keep the chilli seeds in, or add extra fresh chilli to the yoghurt marinade for a sharper finish.
  • Keep the spice rounded: Finish with lemon and fresh herbs; they brighten the bowl and stop the warmth from tasting flat.

Timing notes

  • Most of the time is passive: The rice soaking, chicken simmering and final steaming do much of the work, so the active preparation is mainly slicing, marinating and managing the rice.
  • Rest before serving: Letting the covered pot stand briefly after steaming helps the rice settle and makes the layers easier to fluff without breaking the grains.
  • Best served hot: Serve once the rice is fluffy and the chicken is piping hot, with the herbs added just before eating for the freshest flavour.

Ingredient notes

  • Use basmati rice: Basmati is important here because its long grains stay separate when rinsed, soaked and steamed properly.
  • Chicken thighs stay tender: Boneless thighs suit the simmering stage because they remain juicy and absorb the spiced yoghurt sauce well.
  • Fresh herbs matter: Fresh coriander and mint add brightness at the end; dried herbs will not give the same clean, lifted finish.

Make-ahead tips

  • Good for lunches: Cool the biryani quickly, then portion into sealed containers for easy lunches over the next few days.
  • Reheat gently: Add a small splash of water and reheat covered until piping hot so the rice steams back to a softer texture.
  • Freezer-friendly: Freeze cooled portions in airtight containers, then thaw overnight in the fridge before reheating thoroughly.

  1. Rinse the basmati rice in a colander under cold water until the water runs mostly clear, then soak it in a bowl of cold water for 20 minutes. Drain well and set aside.
  2. In a mixing bowl, combine the yogurt with finely grated ginger, crushed garlic, sliced green chilli, garam masala, ground turmeric, 1 tsp fine sea salt, and the juice of half the lemon. Add the chicken thighs and turn to coat, then set aside while you prepare the onions.
  3. Thinly slice the yellow onion. Melt the ghee in a large pot over medium heat, then cook the onion with a pinch of salt for 12 to 15 minutes, stirring often, until deep golden and crisp at the edges. Scoop out about one-third of the fried onion and set aside for topping.
  4. Add the marinated chicken and all the marinade to the pot with the remaining onions. Cover and simmer on low for 18 to 22 minutes, stirring once or twice, until the chicken is cooked through and the sauce looks thick and glossy.
  5. Meanwhile, bring a saucepan of water to the boil and add 1 tsp fine sea salt. Add the drained rice and boil for 6 to 7 minutes until the grains are just tender on the outside but still firm in the centre, then drain well.
  6. Turn the heat under the chicken to very low. Spread the par-cooked rice over the chicken in an even layer, then sprinkle over the reserved fried onion.
  7. Cover the pot tightly and steam on the lowest heat for 15 minutes, until the rice is fluffy and the chicken is piping hot. Turn off the heat and rest, covered, for 5 minutes.
  8. Finely chop the fresh coriander and fresh mint, then scatter them over the biryani. Fluff gently with a spoon to create layers, then serve in bowls with lemon wedges from the remaining half lemon.

Recipe notes

Tips

  • For the best texture, keep the rice slightly undercooked when you drain it; it finishes cooking during the steaming stage.
  • If you like more heat, keep the seeds in the green chilli; for a milder bowl, remove them before slicing.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised yogurt and ensure the chicken is cooked until piping hot throughout.

Substitutions

  • Replace ghee with unsalted butter for a similar richness.
  • Replace chicken thighs with chicken breast for a leaner bowl; reduce the simmering time slightly to avoid drying out.
  • Replace fresh mint with extra fresh coriander for a more herb-forward finish.

Storage

  • Refrigerate up to 3 days
  • Cool quickly, then refrigerate in a sealed container. Reheat in a covered saucepan with a splash of water over low heat, or in the microwave, until piping hot; thaw overnight in the fridge before reheating if frozen.
