Skillet Cornbread with Jalapeño and Cheddar

Cornbread is a quick American table bread with a distinctive cornmeal crumb, often served warm alongside savoury, saucy dishes. Baking it in a preheated cast-iron pan gives this version its best feature: crisp, deeply golden edges around a moist, tender centre. Jalapeño brings a mild fresh heat, while mature Cheddar melts through the crumb for a salty, savoury finish. It is the kind of bread that works as both a side and a scoop, especially with chilli, barbecue or hearty soups, and it is at its best sliced straight from the skillet while still warm.

Why this recipe works

  • Crisp skillet edges: Heating the cast-iron pan before adding the batter helps the base and sides turn golden and crisp.
  • Balanced richness: Buttermilk adds gentle tang, balancing the butter and Cheddar while keeping the crumb tender.
  • Easy to adapt: The jalapeño and cheese can be adjusted for a milder, creamier or more savoury finish.

Get the most out of this recipe

Adjust the heat

  • For gentler heat: Remove the jalapeño seeds and white pith before chopping; most of the sharper heat sits there.
  • For more kick: Keep some of the seeds in the jalapeño or use a hotter green chilli in its place.
  • Keep it rounded: Mature Cheddar softens the chilli heat with savoury richness, so avoid removing it unless replacing it with another well-flavoured cheese.

Texture tips

  • For extra-crisp edges: Let the skillet get properly hot in the oven before adding the batter, then rest the cornbread briefly in the pan before slicing.
  • Keep the crumb tender: Fold the wet and dry ingredients only until no dry patches remain; a slightly lumpy batter is better than an overworked one.
  • Avoid a dry centre: Bake just until golden and a skewer comes out clean, then serve warm rather than leaving it uncovered for too long.

Ingredient swaps

  • Cheese swap: Monterey Jack can replace Cheddar for a milder, softer cheese flavour.
  • Buttermilk alternative: Milk mixed with lemon juice gives a similar light tang if buttermilk is unavailable.
  • Chilli swap: A green chilli can stand in for jalapeño; choose one with a heat level that suits your preference.

Make-ahead tips

  • Best served warm: The crust is at its crispest shortly after baking, so serve from the skillet if texture is the priority.
  • Reheat gently: Warm slices in a 180°C (355°F) oven until piping hot to revive the edges without drying the crumb.
  • Freezes well: Cool completely, wrap slices tightly and freeze; thaw before reheating for the best texture.

  1. Heat the oven to 220°C (430°F). Put a 23 cm cast-iron frying pan in the oven to heat for 8 minutes.
  2. Meanwhile, melt the butter in a saucepan over low heat, then take off the heat to cool slightly. Finely chop the jalapeño and grate the cheddar.
  3. In a mixing bowl, whisk together the cornmeal, plain flour, baking powder, fine sea salt and caster sugar. In a second bowl, whisk the buttermilk and eggs, then whisk in the melted butter.
  4. Pour the wet mixture into the dry ingredients and fold just until you no longer see dry patches. Fold through most of the jalapeño and cheddar, reserving a small handful of each for the top.
  5. Carefully remove the hot pan from the oven and swirl a little of the batter around the base to coat it, then scrape in the rest. Sprinkle over the reserved jalapeño and cheddar, then bake for 16 to 18 minutes until golden and a skewer comes out clean.
  6. Rest in the pan for 5 minutes, then slice and serve warm. If you like extra crisp edges, leave it in the pan for a further 2 minutes before slicing.

Serving suggestions

This recipe pairs well with:

Chilli Barbecue Soups

Tips

  • For a milder heat, scrape out the jalapeño seeds and white pith before chopping.
  • Do not overmix once the wet and dry ingredients meet; a few small lumps keep the crumb tender.
  • If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs stamped with the British Lion mark.

Substitutions

  • Replace Cheddar cheese with Monterey Jack cheese for a milder, creamier finish.
  • Replace Buttermilk with milk mixed with lemon juice for a similar tang (let it stand for 5 minutes before using).
  • Replace Jalapeno pepper with green chili pepper for a similar heat and flavour.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then store airtight. Reheat slices in a 180°C (355°F) oven for 8 to 10 minutes until piping hot; freeze slices well wrapped for up to 2 months and reheat from thawed.
