Black Bean and Sweetcorn Quesadillas
Why this recipe works
- Fast filling: Canned black beans and sweetcorn need only draining, seasoning and mixing, keeping the recipe practical for a quick lunch.
- Crisp outside, melted centre: Cooking the tortillas in a frying pan gives a golden, lightly crisp surface while the Cheddar melts through the filling.
- Bright finish: Lime zest and juice cut through the cheese and beans, adding freshness without making the filling watery.

Common mistakes
- Using too high a heat: Keep the pan at medium heat so the tortillas toast gradually and the cheese has time to melt before the outside browns too much.
- Overfilling the tortillas: Use an even layer of filling rather than piling it high; this makes the quesadillas easier to flip and helps the cheese bind everything together.
Texture tips
- Drain the filling well: Rinse and drain the beans and sweetcorn thoroughly so excess liquid does not soften the tortillas during cooking.
- Rest before slicing: Let each cooked quesadilla sit briefly before cutting so the melted cheese settles slightly and the wedges stay neater.
Ingredient swaps
- Change the cheese: Monterey Jack can replace Cheddar for a milder flavour and a softer, stretchier melt.
- Swap the topping: Greek yoghurt works in place of sour cream if you want a tangier, lighter finish.
Make-ahead tips
- Mix the filling ahead: The bean and sweetcorn mixture can be prepared in advance and kept chilled, then assembled with the tortillas and cheese just before cooking.
- Reheat for crispness: For leftovers, reheat in a dry frying pan over a medium-low heat until hot and crisp again rather than microwaving, which can soften the tortillas.

Ingredients
Instructions
- Grate the Cheddar. Drain and rinse the black beans and corn, then tip into a bowl.
- Stir the cumin, salt and pepper into the beans and corn. Finely zest the lime into the bowl, then squeeze in half the juice and mix well.
- Lay 2 tortillas on a board and scatter over half the Cheddar, then spoon the bean and corn mixture on top and finish with the remaining Cheddar. Top with the remaining tortillas and press down lightly.
- Heat half the olive oil in a frying pan over a medium heat. Cook one quesadilla for 2 to 3 minutes until the underside is golden and the cheese begins to melt.
- Flip carefully and cook for a further 2 to 3 minutes until crisp and golden on the second side. Transfer to a board and repeat with the remaining oil and quesadilla.
- Cut each quesadilla into wedges. Serve hot with sour cream and the remaining lime half for squeezing over.
Recipe notes
Tips
- Keep the heat at medium so the tortillas toast before the cheese fully melts; if the pan is too hot, the outside will colour before the filling warms through.
- For neat wedges, rest the cooked quesadilla for 1 minute before slicing so the cheese sets slightly.
Substitutions
- Replace Cheddar cheese with Monterey Jack cheese for a milder, stretchier melt.
- Replace sour cream with greek yogurt for a lighter, tangier topping.
Storage
- Refrigerate up to 2 days
- Cool, then refrigerate in a sealed container. Reheat in a dry frying pan over a medium-low heat for 2 to 3 minutes per side until piping hot and crisp again.
