Roast Leg of Lamb with Mint Sauce and Roasted Potatoes

Roast leg of lamb with mint sauce is one of the most recognisable British roast dinners, valued for tender carved meat, crisp-edged potatoes and a sharp herbal sauce that cuts through the richness. In this version, a bone-in leg is seasoned with garlic and rosemary, then roasted so the outside browns while the meat stays juicy. The potatoes cook in the same pan, picking up savoury lamb fat as they turn golden. Fresh mint, malt vinegar and a little sugar make a bright, tangy sauce that keeps the plate lively and makes the dish well suited to Sunday lunch, Easter or any generous family meal.

Why this recipe works

  • Herby flavour throughout: Garlic is tucked directly into the lamb while rosemary seasons the surface, giving the roast flavour both inside and out.
  • Crisp potatoes: Roasting the potatoes around the lamb lets them absorb the pan fat and develop golden, crisp edges.
  • Bright balance: The vinegar-led mint sauce cuts through the richness of the lamb and keeps each serving fresh.

Timing notes

  • Rest before carving: Let the lamb rest loosely covered before slicing so the juices settle and the meat carves more cleanly.
  • Serve the potatoes promptly: Roast potatoes are best served soon after cooking, while the edges are still crisp.

Texture tips

  • For crisper potatoes: Keep the potato pieces in a single layer and turn them through the lamb fat during roasting.
  • For juicy lamb: Avoid carving straight from the oven; resting helps the meat stay moist rather than losing juices on the board.

Ingredient notes

  • Bone-in lamb: A bone-in leg gives a traditional roast shape and helps the meat cook with good flavour and structure.
  • Mint sauce sharpness: Malt vinegar gives the sauce its classic tang; sherry vinegar makes it slightly rounder and less malty.

Serving ideas

  • Classic sides: Serve with seasonal greens, peas or carrots to round out the roast dinner.
  • At the table: Offer the mint sauce separately so each serving can be as sharp and herby as preferred.

  1. Heat the oven to 220°C (430°F). Peel the garlic and finely slice 2 cloves; strip the rosemary leaves from the sprigs and finely chop them.
  2. Pat the lamb dry, then use the tip of a knife to make small slits all over. Push the sliced garlic into the slits, then rub the lamb with 1 tbsp olive oil, 1 tsp fine sea salt, the black pepper and the chopped rosemary.
  3. Put the lamb in a roasting pan and roast for 20 minutes to brown. Reduce the oven to 180°C (355°F).
  4. Meanwhile, peel the potatoes and cut into chunky pieces. Toss with 2 tbsp olive oil and the remaining 1 tsp fine sea salt.
  5. Add the potatoes to the roasting pan around the lamb, turning them in the lamb fat and oil. Roast for 55 to 65 minutes, turning the potatoes once or twice, until the lamb is cooked to your liking and the potatoes are golden and crisp at the edges.
  6. While the lamb roasts, finely chop the mint. Put the caster sugar and malt vinegar in a small saucepan with 2 tbsp water and warm gently, stirring, just until the sugar dissolves.
  7. Take the pan off the heat and stir in the chopped mint. Leave the mint sauce to stand so the flavour infuses.
  8. Lift the lamb onto a board and rest for 15 minutes, loosely covered. Carve the lamb and serve with the roasted potatoes and mint sauce.

Recipe notes

Tips

  • For extra-crisp potatoes, give them a good turn in the roasting pan fat halfway through cooking and keep them in a single layer.
  • If you have a thermometer, aim for about 55°C (130°F) for medium-rare, 60°C (140°F) for medium, and 70°C (160°F) for well done, then rest before carving.

Substitutions

  • Replace Fresh rosemary with fresh thyme for a softer, more floral herb note.
  • Replace Malt vinegar with sherry vinegar for a slightly rounder, less malty mint sauce.

Storage

  • Refrigerate up to 3 days
  • Cool leftovers quickly, then refrigerate in a sealed container. Freeze sliced lamb and potatoes separately if possible; defrost overnight in the fridge and reheat in a 180°C (355°F) oven until piping hot, with the potatoes spread out to re-crisp.
