Gougères with Ham and Gruyère
Why this recipe works
- Classic choux method: Cooking the flour with milk and butter creates a sturdy paste that traps steam in the oven, helping the gougères puff properly.
- Crisp, airy finish: Drying the dough briefly in the pan, then leaving the baked puffs in the switched-off oven, helps reduce excess moisture.
- Savoury depth: Gruyère brings nuttiness, ham adds saltiness, and Dijon mustard sharpens the richness without overpowering the pastry.

Timing notes
- Cool the dough before adding eggs: A short cooling period prevents the eggs from scrambling while the dough is still warm enough to absorb them smoothly.
- Serve warm for best texture: Gougères are at their lightest and crispest shortly after baking, although they reheat well from chilled or frozen.
Texture tips
- Beat in the eggs fully: Add the eggs one at a time and beat until glossy; properly incorporated eggs help create lift and an even crumb.
- Do not open the oven too early: Keep the oven door closed during the initial bake so the puffs can set before any steam escapes.
- For extra crispness: Piercing the baked puffs lets steam escape, which helps the shells stay crisp after baking.
Ingredient notes
- Use a good melting cheese: Gruyère gives the most recognisable nutty flavour, while Emmental makes a milder, softer-tasting alternative.
- Cut the ham small: Finely diced ham distributes more evenly through the choux and makes the puffs easier to pipe or spoon.
- Mustard choice matters: Dijon keeps the flavour smooth and sharp; whole-grain mustard adds a little texture and a gentler heat.
Make-ahead tips
- Freeze after baking: Cool the gougères completely before freezing, then reheat from frozen until hot and crisp.
- Reheat in the oven: Use a 180°C (355°F) oven to restore crispness; microwaving will soften the pastry.

Ingredients
Instructions
- Heat the oven to 200°C (390°F) and line a baking tray. Grate the gruyère and dice the ham into small pieces so they fold through the dough evenly.
- Put the milk, butter and salt in a saucepan over medium heat and bring just to a boil, stirring to melt the butter. Tip in the flour all at once and beat vigorously with a wooden spoon until the mixture forms a smooth ball and leaves a thin film on the pan.
- Cook the dough for 1 to 2 minutes, beating constantly, to dry it out slightly. Tip into a mixing bowl and leave for 3 minutes so it cools a little before adding the eggs.
- Beat in the eggs one at a time until fully absorbed and the dough is glossy and smooth. It should fall from the spoon in a thick ribbon; if it feels stiff, keep beating to loosen it.
- Stir in the Dijon mustard and black pepper, then fold in the gruyère and ham. Transfer the mixture to a piping bag, or use two spoons.
- Pipe or spoon 16 to 20 small mounds onto the tray, leaving space for expansion. Bake for 22 to 26 minutes until well risen, deep golden and crisp, without opening the oven door for the first 18 minutes.
- Turn off the oven, crack the door open slightly, and leave the gougères inside for 3 minutes to help them dry. Serve warm.
Recipe notes
Tips
- For the best rise, make sure the dough is hot enough to cook the flour properly, then cool it briefly before adding the eggs so they do not scramble.
- If you want extra-crisp gougères, pierce each puff with the tip of a knife as soon as they come out, then return to the switched-off oven for 5 minutes.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use eggs stamped with the British Lion mark and bake the gougères until fully set and piping hot throughout.
Substitutions
- Replace Gruyère cheese with Emmental cheese for a milder, nuttier flavour.
- Replace cured ham with smoked ham for a smokier finish.
- Replace Dijon mustard with whole-grain mustard for a coarser texture and gentler heat.
Storage
- Refrigerate up to 2 days
- Cool completely, then store airtight. Reheat from chilled in a 180°C (355°F) oven for 6 to 8 minutes until hot and crisp; freeze for up to 2 months and reheat from frozen for 10 to 12 minutes.
