Chicken Breasts in Ancho Chilli Sauce (Pechuga de Pollo en Salsa de Chile Ancho)
Why this recipe works
- Layered chilli flavour: Toasting the ancho chilli powder with cumin and cinnamon deepens the sauce before the tomatoes and stock are added.
- Saucy and satisfying: The blended sauce lightly coats the chicken, making it ideal for serving with warm corn tortillas.
- Good for preparing ahead: The chicken can be cooled and stored in the sauce, which helps keep it moist when reheated gently.

Ingredient notes
- About ancho chilli: Ancho chilli is typically smoky, fruity and relatively mild, so it gives depth rather than sharp heat.
- Using chilli powder: Ancho chilli powder makes the sauce quicker than soaking whole dried chillies, while still giving the dish its characteristic earthy flavour.
- Balancing the sauce: Ripe tomatoes bring natural acidity and sweetness; add lime at the table if you want a brighter finish.
Texture tips
- For a smoother sauce: Blend the sauce thoroughly after simmering, then return it to low heat so it thickens without catching.
- Keep the chicken tender: Sear the chicken only until lightly golden, then let it finish gently in the sauce rather than cooking it through in the pan first.
Adjust the heat
- For a gentler sauce: Use a mild ancho chilli powder and keep the simmer gentle so the sauce stays rounded rather than bitter.
- For more heat: Add a hotter chilli powder or a little fresh chilli alongside the ancho, keeping the ancho as the main flavour.
Make-ahead tips
- Make the sauce ahead: The sauce can be cooked and blended in advance, then reheated gently before the chicken is added.
- Reheat gently: Warm the chicken and sauce over low heat with a splash of water if needed, until piping hot throughout.
- Freeze without tortillas: Freeze the chicken in the sauce, then defrost overnight in the fridge and warm fresh tortillas separately.

Ingredients
Instructions
- Peel and roughly chop the onion and garlic. Roughly chop the tomatoes. Pat the chicken dry and season all over with 1 tsp of the fine sea salt and the black pepper.
- Heat 1 tbsp of the vegetable oil in a frying pan over medium-high heat. Sear the chicken for 2–3 minutes per side until lightly golden, then transfer to a plate (it will finish cooking in the sauce).
- Add the remaining 1 tbsp vegetable oil to the pan and reduce the heat to medium. Cook the onion with a pinch of the remaining salt for 6–8 minutes until softened and lightly golden, then stir in the garlic for 30 seconds until fragrant.
- Stir in the ancho chili powder, ground cumin and ground cinnamon and cook for 30–60 seconds, stirring, to toast the spices. Add the tomatoes and cook for 4–5 minutes until they start to break down.
- Pour in the chicken stock and bring to a gentle simmer, scraping up any browned bits. Simmer for 8–10 minutes until the tomatoes are very soft and the liquid has taken on a deep red colour.
- Carefully blend the sauce until completely smooth, then return it to the pan over low heat. Taste and season with the remaining fine sea salt if needed.
- Nestle the chicken back into the sauce and simmer gently for 10–12 minutes, turning once, until the chicken is cooked through and the sauce lightly coats the back of a spoon. Keep the heat low so the sauce does not catch.
- Warm the corn tortillas in a dry frying pan for about 30 seconds per side until pliable. Serve the chicken with plenty of sauce and the warm tortillas for scooping.

Serving suggestions
This recipe pairs well with:
Tips
- For the smoothest sauce, blend while hot but not boiling, and vent the blender lid slightly so steam can escape safely.
- If you prefer a thicker sauce, simmer it for 3–5 minutes after blending before adding the chicken back in.
- If serving vulnerable groups, ensure the chicken is cooked until piping hot throughout with no pink in the centre.
Substitutions
- Replace Chicken stock with vegetable broth for a lighter, less chicken-forward sauce.
- Replace Yellow onion with shallot for a slightly sweeter, more delicate base.
Storage
- Refrigerate up to 3 days
- Cool, then refrigerate the chicken in the sauce in a sealed container. Reheat gently in a saucepan over low heat with a splash of water if needed until piping hot; warm the corn tortillas separately. Freeze the chicken and sauce (not the tortillas) for up to 2 months and defrost overnight in the fridge before reheating.
