Frittata al Forno con Zucchine (Baked Courgette Frittata)
Why this recipe works
- Tender baked set: Whole milk softens the egg mixture so the centre stays delicate rather than dense.
- Simple savoury depth: Softened onion, Parmesan and black pepper give the mild courgette a fuller, more rounded flavour.
- Good warm or room temperature: The frittata slices cleanly after resting and keeps well, making it useful for packed lunches, brunches or prepared meals.

Texture tips
- Cook off courgette moisture: Let the courgette soften until the pan is nearly dry before mixing it with the eggs; this helps the frittata set cleanly.
- Bake until just set: Remove it when the centre is firm but still tender, as residual heat will continue to finish the set while it rests.
Timing notes
- Rest before slicing: A short rest after baking helps the egg structure settle, giving neater slices and a less fragile texture.
- Serve warm or at room temperature: This style of frittata does not need to be served straight from the oven, which makes it practical for relaxed meals or sharing.
Ingredient notes
- Choose firm courgettes: Firm courgettes hold their shape better and release less water than very soft or overripe ones.
- Use a hard grating cheese: Parmesan gives a savoury, salty finish; Grana Padano is a milder alternative with a slightly creamier character.
Make-ahead tips
- Reheat gently: Warm slices in a 180°C (355°F) oven until piping hot, or serve chilled frittata at room temperature if preferred.
- Freeze after cooling: Cool completely, wrap well and freeze; defrost overnight in the fridge before reheating for the best texture.

Ingredients
Instructions
- Heat the oven to 190°C (375°F). Lightly oil a baking dish with a little of the olive oil.
- Peel and finely slice the onion. Trim the courgettes, then slice into thin half-moons.
- Warm the remaining olive oil in a frying pan over a medium heat. Add the onion with a pinch of the salt and cook for 5 minutes until softened, then add the courgette and cook for 6 to 8 minutes until tender and any liquid has mostly evaporated.
- In a mixing bowl, whisk the eggs with the milk, Parmesan, remaining salt and black pepper. Stir in the warm courgette mixture.
- Pour into the prepared baking dish and level the top. Bake for 18 to 22 minutes until just firm in the centre and lightly golden at the edges.
- Rest for 5 minutes before slicing so it sets cleanly. Serve warm or at room temperature with a final grind of black pepper if you like.
Recipe notes
Tips
- Cook the courgette until the pan is nearly dry; driving off excess moisture helps the frittata set tenderly rather than weeping.
- For the neatest slices, let the frittata rest for 5 to 10 minutes after baking before cutting.
Substitutions
- Replace Parmesan with Grana Padano cheese for a slightly milder, creamier finish.
- Replace whole milk with cooking cream for a richer, softer set.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat slices in a 180°C (355°F) oven for 8 to 10 minutes until piping hot, or eat at room temperature; freeze well-wrapped for up to 2 months and defrost overnight in the fridge before reheating.
