Vegan Korean-Tex-Mex Bibimbap Burrito Bowl

Part bibimbap-inspired rice bowl, part Tex-Mex burrito bowl, this vegan dinner centres on steamed long-grain rice topped with glossy gochujang black beans, quick-pickled cucumber and ripe avocado. The beans bring chilli warmth, savoury depth and a saucy texture, while lime, rice vinegar and fresh coriander keep the bowl bright rather than heavy. A little toasted sesame oil ties the Korean-leaning flavours together. It is the kind of flexible grain bowl that works well for a fast weeknight meal, with distinct components that stay fresh, tangy and satisfying.

Why this recipe works

  • Layered savoury flavour: Gochujang, soy sauce, garlic and toasted sesame oil give the black beans depth without needing a long simmer.
  • Bright balance: Quick-pickled cucumber and lime cut through the richness of avocado and the sweetness of the chilli paste.
  • Efficient timing: The cucumber pickles and the beans simmer while the rice steams, keeping the whole bowl practical for a weeknight.

Adjust the heat

  • For a gentler bowl: Start with less gochujang and add more only after the beans have simmered and the flavours have settled.
  • For more heat: Stir in extra gochujang at the end, then balance with lime so the chilli stays bright rather than heavy.
  • Keep the heat rounded: The lime-sesame dressing and pickled cucumber are important counterpoints to the chilli paste, so do not skip the acidic elements.

Ingredient notes

  • About gochujang: Gochujang is a fermented Korean chilli paste; brands vary in sweetness, saltiness and heat, so taste before adding more.
  • Choose the avocado carefully: Use a ripe but firm avocado so it slices cleanly and holds its shape against the warm beans.
  • Adjust the pickle: The cucumber should taste bright but not harsh; add a little more lime only if it needs extra sharpness.

Dietary alternatives

  • For a gluten-free bowl: Use gluten-free tamari in place of soy sauce and check that the gochujang is certified gluten-free.

Make-ahead tips

  • Store for best texture: Keep the pickled cucumber, avocado and coriander separate from the rice and beans until serving.
  • Reheat safely: Reheat the rice and beans until piping hot, then add the cool toppings just before eating.
  • Prep the cucumber early: The cucumber can be sliced and lightly pickled ahead, giving it time to soften while staying crisp.

  1. Rinse the rice in cold water until the water runs mostly clear, then tip into a saucepan with 300 ml water. Bring to the boil, cover, and cook on the lowest heat for 12 minutes. Remove from the heat and leave covered for 8 minutes to finish steaming.
  2. Meanwhile, thinly slice the cucumber and put it in a mixing bowl. Stir in the rice vinegar and the juice of half the lime, then set aside to lightly pickle while you cook the beans. Finely grate or crush the garlic.
  3. Warm a large frying pan over medium heat and add 1 tsp of the toasted sesame oil. Add the garlic and cook for 30 seconds until fragrant. Tip in the black beans (with their liquid), then stir in the gochujang and soy sauce and simmer for 5 to 7 minutes until glossy and thick enough to coat the beans.
  4. Halve, stone and slice the avocado. Roughly chop the fresh coriander and squeeze the remaining lime juice into a small bowl, then stir in the remaining 1 tsp toasted sesame oil to make a quick dressing. Taste the pickled cucumber and add a little more lime juice if you want it sharper.
  5. Divide the rice between two bowls and spoon the gochujang black beans over the top. Add the pickled cucumber and avocado. Finish with the coriander and drizzle over the lime and sesame dressing.

Recipe notes

Tips

  • For a milder bowl, start with 1 tbsp gochujang, then add more at the end until it tastes right.
  • If you are serving anyone who is vulnerable to foodborne illness, make sure the rice is served piping hot and cooled quickly before chilling any leftovers.

Substitutions

  • Replace rice vinegar with white wine vinegar for a slightly fruitier pickle.
  • Replace fresh coriander with fresh mint for a different, fresher finish.

Storage

  • Refrigerate up to 2 days
  • Store rice and beans together in an airtight container and keep the pickled cucumber separate for best texture. Reheat the rice and beans in the microwave until piping hot, then top with avocado, cucumber and coriander just before serving.
