Goan Fish Caldine (Mild Coconut Fish Curry)
Why this recipe works
- Gentle layered flavour: Softened onion, ginger, garlic, turmeric and green chilli build a warm base without overwhelming the fish.
- Silky coconut sauce: Coconut milk simmers briefly with water to create a light, smooth curry rather than a heavy or overly rich one.
- Easy fish cooking: The fish cooks directly in the sauce for just a few minutes, making it easier to keep moist and delicate.

Adjust the heat
- For a milder curry: Remove the chilli seeds before cooking, or use less chilli for a very gentle sauce.
- For more warmth: Leave the chilli seeds in, or add a little extra green chilli while keeping the curry softly spiced rather than hot.
Texture tips
- Keep the sauce smooth: Once the coconut milk is added, maintain a gentle simmer; boiling hard can cause the sauce to split.
- Protect the fish: Add the fish in large pieces and turn it only once so it stays intact and flakes cleanly.
Make-ahead tips
- Make the sauce ahead: The coconut curry base can be prepared in advance, then reheated gently before adding the fish to cook fresh.
- Reheat gently: Warm leftovers over a low heat until piping hot, avoiding a hard boil so the fish does not break up and the sauce stays smooth.
Serving ideas
- Serve with rice: Steamed rice is the natural pairing, soaking up the mild coconut sauce without competing with the fish.
- Finish fresh: A final squeeze of lime and fresh coriander sharpen the coconut richness and make the curry taste brighter.

Ingredients
Instructions
- Finely slice the onion. Grate the ginger, crush the garlic, and slit the green chilli lengthways (remove the seeds for an even milder curry).
- Heat the coconut oil in a saucepan over a medium heat. Add the onion with a pinch of the salt and cook for 8 to 10 minutes, stirring, until soft and translucent but not browned.
- Stir in the ginger, garlic, green chilli and ground turmeric. Cook for 1 minute until fragrant.
- Pour in the coconut milk and water, then bring to a gentle simmer. Cook for 8 minutes, stirring occasionally, until the sauce looks silky and lightly thickened.
- Cut the fish into large bite-sized pieces and season with the remaining salt. Slide the fish into the simmering sauce and cook gently for 4 to 6 minutes, turning once, until just opaque and flaking.
- Take the pan off the heat and squeeze in the lime juice to taste. Roughly chop the fresh coriander and scatter over the top, then serve straight away.
Recipe notes
Serving suggestions
This recipe pairs well with:
Tips
- Keep the curry at a gentle simmer once the coconut milk is added; a hard boil can split the sauce.
- For the most delicate fish, add it in large pieces and avoid stirring vigorously, instead gently turning the pieces once.
- If serving vulnerable groups, make sure the fish is cooked until fully opaque and flakes easily, and serve piping hot.
Substitutions
- Replace Coconut oil with Olive oil for a less coconut-forward base.
- Replace Lime with Lemon for a similar bright finish.
Storage
- Refrigerate up to 2 days
- Cool, cover and refrigerate within 2 hours. Reheat gently in a saucepan over a low heat until piping hot, taking care not to boil hard as the fish can break up and the coconut milk may split.
