Arroz con Pollo (Cuban-Style Rice and Chicken)
Why this recipe works
- One-pot depth: Browning the chicken, softening the vegetables and simmering the rice in the same pot builds flavour without extra pans.
- Layered savoury base: Onion, pepper, garlic, cumin, tomatoes and bay season the stock so the rice absorbs flavour as it cooks.
- Tender chicken, fluffy rice: Bone-in thighs stay moist during the simmer while the rice cooks gently around them.

Timing notes
- Rest before fluffing: Leaving the covered pot off the heat for a few minutes helps the rice finish steaming and keeps the grains separate.
- Mostly hands-off cooking: The active work is in browning the chicken and building the base; the covered simmer does most of the cooking.
Texture tips
- For fluffier rice: Keep the simmer low and steady, then fluff around the chicken rather than stirring heavily.
- Avoid wet rice: Add extra stock only if the pot looks dry before the rice is tender; too much liquid can make the grains heavy.
Make-ahead tips
- Good for portions: Cool quickly, portion into sealed containers and refrigerate for up to 3 days.
- Reheat gently: Add a splash of stock and reheat covered over low heat, or warm in a 180°C (355°F) oven until piping hot throughout.
- Freezer-friendly: Freeze in portions for up to 2 months, then defrost overnight in the fridge before reheating.
Ingredient notes
- Best chicken choice: Bone-in, skin-on thighs suit this style because they stay tender during the simmer and add richness to the rice.
- Using chicken breast: Chicken breast cooks faster than thighs, so add it later in the simmer to help prevent dryness.

Ingredients
Instructions
- Pat the chicken dry, then season all over with the fine sea salt and black pepper. Heat the olive oil in a Dutch oven over medium-high heat.
- Brown the chicken thighs skin-side down until deeply golden, then turn and brown the other side. Transfer to a plate; the chicken will finish cooking later.
- Reduce the heat to medium and add the onion and red pepper. Cook, stirring, until softened and lightly golden.
- Stir in the garlic and ground cumin and cook until fragrant. Add the rice and stir well so the grains are coated in the seasoned oil.
- Tip in the canned tomatoes and pour in the chicken stock, then add the bay leaves. Bring to a gentle boil, scraping up any browned bits from the base of the pot.
- Nestle the chicken thighs back into the rice, skin-side up, along with any resting juices. Cover and simmer on low until the rice is tender and the chicken is cooked through.
- Turn off the heat and leave covered for 5 minutes, then remove the lid and fluff the rice around the chicken. Squeeze over the lime and scatter with fresh coriander to serve.
Recipe notes
Tips
- Keep the simmer very gentle so the rice cooks evenly without catching; if it looks dry before the rice is tender, add a small splash of chicken stock and continue cooking.
- For the best texture, rest the pot off the heat before fluffing so the rice finishes steaming and the grains stay fluffy.
- Food safety: make sure the chicken is piping hot throughout before serving.
Substitutions
- Replace Chicken thighs with Chicken breast cutlets for a leaner version; add them back for the final 12 to 15 minutes so they stay juicy.
- Replace Long-grain white rice with basmati rice for a more fragrant finish; keep the stock the same and start checking for doneness 5 minutes earlier.
- Replace Fresh coriander with fresh flat-leaf parsley for a milder herbal topping.
Storage
