Crostate di Frutta Fresca (Italian Fresh Fruit Tartlets)
Why this recipe works
- Crisp pastry base: Chilling the dough before baking helps the tartlet shells hold their shape and bake up dry and delicate.
- Smooth pastry cream: Cornflour thickens the custard into a glossy filling that can be spooned or piped cleanly once chilled.
- Fresh, balanced finish: Lemon in the pastry cream and ripe fresh fruit cut through the sweetness, while the apricot glaze adds shine without making the tartlets heavy.

Timing notes
- Chill in stages: The pastry needs a short chill before rolling and again before baking, while the pastry cream should be cold enough to hold its shape before filling.
- Cool before assembling: Let the shells cool completely before adding the custard; warm pastry will soften the cream and compromise the crisp base.
- Best served chilled: The tartlets should be chilled after glazing, then served cold while the fruit still looks fresh and the pastry has not softened too much.
Ingredient notes
- Choose firm-ripe fruit: Strawberries and kiwi should be ripe enough for flavour but firm enough to slice neatly and sit cleanly on the custard.
- Use fresh fruit: Frozen fruit releases too much liquid as it thaws, which can stain the pastry cream and soften the tartlet shells.
- Apricot jam for glaze: Apricot jam gives the fruit a classic clear gloss and a mild flavour that does not compete with the berries and kiwi.
Make-ahead tips
- Prepare components ahead: The pastry shells and pastry cream can be made in advance and kept separately, which makes final assembly much easier.
- Assemble close to serving: Fill, fruit and glaze the tartlets shortly before serving for the best contrast between crisp pastry, smooth cream and fresh topping.
- Best the same day: Once assembled, the tartlets will keep in the fridge, but their texture is best on the day they are filled.
Common mistakes
- Adding hot milk too quickly: Whisk the hot milk into the egg mixture gradually so the custard stays smooth rather than scrambling.
- Overheating the pastry cream: Cook the custard over medium-low heat and whisk constantly; once thick and glossy, take it off the heat.
- Filling too early: Assembled tartlets soften as they sit, so avoid adding the cream and fruit far in advance unless texture is less important.

Instructions
- Make the pastry: put the flour and sugar in a bowl, then rub in the cold butter with your fingertips until it looks like fine crumbs. Beat 1 egg and mix it in to form a dough, adding a tiny splash of cold water only if needed to bring it together. Flatten into a disc and chill for 20 minutes.
- Heat the oven to 180°C (355°F). Roll the pastry out on a lightly floured surface to about 3 mm thick, then cut 6 rounds and line a 6-hole muffin tin, pressing into the corners. Prick the bases with a fork and chill for 10 minutes.
- Bake the tartlet shells for 18 to 22 minutes until lightly golden and dry to the touch. Leave to cool in the tin for 5 minutes, then lift out and cool completely. Keep the oven on only if you need it for another batch.
- Make the pastry cream: warm the milk in a saucepan over medium heat until steaming but not boiling. In a bowl, whisk the cornflour, sugar and 2 eggs until smooth, then slowly whisk in the hot milk. Return everything to the pan and cook over medium-low heat, whisking constantly, for 3 to 5 minutes until thick and glossy.
- Take the pan off the heat and whisk in the vanilla extract and a little lemon zest, then squeeze in 1 tbsp lemon juice to brighten the flavour. Pour into a bowl and press a piece of baking paper directly onto the surface to prevent a skin forming. Cool to room temperature, then chill for 20 minutes until set enough to pipe or spoon.
- Prepare the fruit: hull and slice the strawberries, peel and slice the kiwi, and keep the blueberries whole. Spoon or pipe the pastry cream into the cooled tartlet shells, levelling the tops. Arrange the fruit neatly over the cream.
- Warm the apricot jam with 1 tbsp water in a small saucepan until loose, then strain if you want a very smooth glaze. Brush a thin layer over the fruit for shine. Chill the tartlets for at least 20 minutes before serving.
Recipe notes
Tips
- For the neatest tartlets, let the pastry cream cool fully before filling so it stays thick and does not soften the pastry.
- If serving to pregnant people, young children, older adults, or anyone immunocompromised, use pasteurised eggs for the pastry cream and make sure it is cooked until thick and bubbling.
Substitutions
- Replace Vanilla extract with vanilla bean paste for a more pronounced vanilla flavour.
- Replace Apricot jam with orange marmalade for a slightly more citrusy glaze.
Storage
- Refrigerate up to 2 days
- Store the assembled tartlets in a single layer in the fridge. For the best texture, add the fruit and glaze as close to serving as possible, as the pastry will soften over time.
