Pasta e Fagioli (Italian Bean and Pasta Soup)
Why this recipe works
- Savoury base: Slowly softening onion, carrot and celery in olive oil gives the soup a rounded, aromatic foundation before the tomato and stock are added.
- Naturally thickened: Borlotti beans and pastina release starch as they simmer, creating a hearty texture without cream or added thickeners.
- One-pot method: Cooking the pasta directly in the soup keeps the method simple and helps the broth become richer as it cooks.

Ingredient notes
- Choose tender beans: Cooked borlotti beans give the soup its traditional creamy bite; they should be tender before they go into the pot.
- Using rosemary: Fresh rosemary gives a cleaner herbal note, while dried rosemary is stronger and should be used sparingly.
Texture tips
- For a thicker soup: Let the soup rest briefly off the heat before serving so the pasta starch can settle into the broth.
- For a looser broth: Add a little hot vegetable stock gradually and warm gently until the soup is piping hot.
Common mistakes
- Boiling too hard: Keep the soup at a gentle simmer, especially after adding the pasta, to avoid a gluey texture and sticking at the base of the pot.
- Adding pasta too early: Pastina continues to absorb liquid as it stands, so add it near the end of cooking for the best texture.
Make-ahead tips
- Make the base ahead: The vegetable, tomato and bean base can be prepared in advance; add the pastina when reheating for a fresher texture.
- Reheat gently: Warm on the hob with a splash of stock, stirring often, as the pasta will thicken the soup in the fridge.

Ingredients
Instructions
- Finely chop the onion, carrot and celery. Pick the rosemary leaves and tie them into a small bundle with the stem, or leave the sprig whole for easy removal later.
- Warm the olive oil in a large pot over a medium heat. Add the onion, carrot and celery with a pinch of the salt and cook for 8 to 10 minutes, stirring often, until softened but not browned.
- Stir in the rosemary, then pour in the tomato passata and vegetable stock. Bring to a gentle simmer and cook for 10 minutes so the flavours meld.
- Add the borlotti beans and return to a steady simmer. Cook for 8 minutes, stirring occasionally, until the soup looks slightly thicker.
- Stir in the pastina and simmer for 6 to 8 minutes, stirring frequently so it does not catch, until the pasta is tender and the broth is lightly thickened. Remove the rosemary, then season with the remaining salt and the black pepper.
- Rest the soup off the heat for 2 minutes to settle and thicken slightly. Ladle into bowls and serve hot.
Recipe notes
Tips
- Keep the simmer gentle once the pasta goes in and stir often; pastina can stick quickly as it releases starch.
- If the soup thickens too much as it stands, loosen it with a splash of hot vegetable stock and warm gently until piping hot.
Substitutions
- Replace pastina with acini di pepe for a similar small-pasta texture.
- Replace fresh rosemary with dried rosemary, using a small pinch and removing any woody pieces before serving.
Storage
- Refrigerate up to 3 days
- Cool, cover and refrigerate. The pasta will continue to absorb liquid, so add a little vegetable stock when reheating and warm gently on the hob until piping hot, stirring often.
