British Veggie Traybake with Mustard and Thyme
Why this recipe works
- Caramelised edges: Cutting the vegetables into chunky, even pieces helps them roast at the same pace while developing crisp, golden edges.
- Bright savoury balance: Wholegrain mustard adds tang and texture, while lemon at the end cuts through the richness of the roasted vegetables.
- Simple traybake method: Everything roasts together on one tray, making the method straightforward and keeping cleanup low.

Texture tips
- Give the vegetables space: Spread the pieces in a single layer with a little room between them so they roast rather than steam.
- Use a hot tray if preferred: For a slightly crisper finish, heat the baking tray in the oven before adding the coated vegetables carefully.
Ingredient notes
- Choose sturdy root vegetables: Potatoes, carrots and parsnips hold their shape well during roasting and become naturally sweet as they caramelise.
- Mustard choice matters: Wholegrain mustard gives texture and a rounded tang; Dijon makes the coating smoother and sharper.
Make-ahead tips
- Good for meal prep: Cool the roasted vegetables completely, then refrigerate in a sealed container and use within 3 days.
- Reheat on a tray: Reheat at 200°C (390°F) until piping hot so the edges have a chance to re-crisp.
Serving ideas
- Serve with a main: Pair with roast chicken, sausages, lentil loaf or a hearty bean dish for a fuller meal.
- Add a finishing touch: A spoonful of yoghurt-style sauce, extra lemon or chopped fresh herbs works well just before serving.

Ingredients
Instructions
- Heat the oven to 220°C (430°F). Scrub the potatoes, then peel the carrots and parsnips; cut everything into chunky, even pieces so they roast at the same rate. Cut the red onions into wedges.
- In a large bowl, mix the olive oil, whole-grain mustard, dried thyme, fine sea salt and black pepper. Add the vegetables and toss until everything is well coated. Tip onto a large baking tray and spread into a single layer, leaving a little space between pieces.
- Roast for 40 minutes, turning the vegetables halfway through, until tender and deeply golden at the edges. If the tray looks crowded, give everything a good stir and spread it back out so it roasts rather than steams. Squeeze over the lemon just before serving.

Tips
- Cut the vegetables to a similar thickness so they finish cooking together and caramelise evenly.
- For extra crisp edges, make sure the vegetables are in a single layer with a little space between pieces.
- If serving to anyone vulnerable, wash the vegetables thoroughly and serve the traybake piping hot.
Substitutions
- Replace dried thyme with dried rosemary for a more robust, piney flavour.
- Replace whole-grain mustard with Dijon mustard for a smoother, sharper coating.
Storage
- Refrigerate up to 3 days
- Cool completely, then refrigerate in a sealed container for up to 3 days. Reheat on a baking tray at 200°C (390°F) for 10–15 minutes until piping hot and the edges re-crisp; freeze for up to 2 months and reheat from thawed in the same way.
