Shrimp and Grits (Creamy Maize Grits with Bacon and Prawns)
Why this recipe works
- Creamy base: Cooking the grits with stock and milk gives them a savoury, smooth texture before butter rounds out the finish.
- Built-in pan flavour: Rendered bacon fat seasons the spring onions, garlic and prawns, creating a deeper sauce without extra steps.
- Bright finish: Lemon juice cuts through the richness of the bacon, butter and grits, keeping the dish balanced rather than heavy.

Timing notes
- Cook the topping while the grits simmer: The bacon and prawns can be prepared as the grits cook, so both components are ready to serve hot.
- Serve straight away: Prawns are best just cooked, and grits thicken as they stand, so assemble the bowls as soon as the pan sauce is finished.
Ingredient notes
- Choose the right grits: Use proper maize grits rather than instant polenta-style products where possible; the texture should become creamy but still have gentle body.
- Use streaky bacon for flavour: Streaky bacon renders enough fat to season the pan and form the base of the savoury sauce.
- Add lemon to taste: Stir in the lemon at the end so the sauce stays fresh and bright, adjusting it to balance the richness.
Make-ahead tips
- Prep the aromatics ahead: The bacon, spring onions, garlic and lemon can be prepared in advance to make the final cooking more streamlined.
- Store separately: Keep the grits and prawn topping in separate containers so the grits can be loosened and the prawns warmed gently.
- Reheat gently: Warm the grits over low heat with a little milk until smooth, and heat the prawns only until piping hot to avoid drying them out.

Ingredients
Instructions
- Bring the chicken stock and whole milk to a gentle boil in a saucepan, then whisk in the grits in a steady stream. Reduce to low and cook, stirring often, for 18 to 22 minutes until thick and creamy. Season with 1 tsp of the fine sea salt, then stir in half the butter and keep warm on the lowest heat.
- Meanwhile, cut the streaky bacon into small pieces. Thinly slice the spring onions, keeping the white and green parts separate, and finely chop the garlic. Cut the lemon in half.
- Set a large frying pan over medium heat and cook the bacon for 6 to 8 minutes until browned and the fat has rendered. Add the white parts of the spring onions and cook for 1 minute until softened. Stir in the garlic and cook for 30 seconds until fragrant.
- Add the prawns to the pan with the cayenne pepper, black pepper and the remaining 0.5 tsp fine sea salt. Sauté for 2 to 4 minutes, turning, until the prawns are opaque and just cooked through. Stir in the remaining butter to gloss the sauce, then squeeze in the lemon juice to taste and add the green parts of the spring onions.
- Spoon the grits into warm bowls. Top with the prawns and bacon, then spoon over the pan sauce. Serve straight away while hot.
Recipe notes
Tips
- Whisk the grits in slowly as the liquid boils to prevent lumps, then keep the heat low and stir often so they do not catch on the base.
- For the best texture, cook the prawns only until just opaque; overcooking will make them firm and dry.
- Food safety: if serving anyone who is pregnant, elderly, or immunocompromised, make sure the prawns are cooked through and served piping hot.
Substitutions
- Replace chicken stock with vegetable broth for a lighter, less meaty base.
- Replace whole milk with lactose-free milk for a similar creaminess.
Storage
- Refrigerate up to 2 days
- Cool and refrigerate the grits and prawn topping separately. Reheat the grits in a saucepan over low heat with a splash of whole milk, stirring until smooth, and warm the prawns gently in a frying pan just until piping hot.
