Air Fryer Sausage and Mash
Why this recipe works
- Efficient cooking: The sausages cook in the air fryer while the potatoes simmer, keeping the workflow simple and well timed.
- Creamy mash: Steam-drying the potatoes before mashing helps prevent watery mash and gives the butter and milk a smoother base.
- Classic comfort: Browned sausages and buttery mash deliver the familiar savoury richness that makes this a reliable everyday supper.

Texture tips
- For smoother mash: Mash the potatoes while they are still hot, then stir in the warmed milk gradually until the texture is creamy.
- Avoid watery potatoes: Drain the potatoes thoroughly and let them steam dry in the hot pot before adding butter or milk.
Common mistakes
- Do not overcrowd the air fryer: Keep the sausages in a single layer so hot air can circulate and brown them evenly.
- Check thicker sausages: Larger sausages may need a little longer than the stated time; they should be piping hot in the centre before serving.
- Keep the milk gentle: Warm the milk gently rather than boiling it, which helps keep the mash creamy and prevents sticking.
Make-ahead tips
- Cook ahead if needed: The sausages and mash can be cooled quickly and refrigerated in an airtight container for up to 2 days.
- Reheat gently: Warm the mash over a low heat with a splash of milk, and reheat the sausages in the air fryer at 180°C (355°F) until hot throughout.
Serving ideas
- Add gravy: Serve with onion gravy or a simple pan gravy for a more traditional bangers-and-mash style plate.
- Add greens: Peas, cabbage, broccoli or green beans balance the richness of the sausages and buttery mash.

Ingredients
Instructions
- Peel the potatoes and cut into even chunks. Put them in a large pot, cover with cold water, and add 1 tsp of the fine sea salt. Bring to the boil, then simmer for 15 to 18 minutes until very tender.
- While the potatoes cook, arrange the pork sausages in the air fryer basket in a single layer. Air fry at 190°C (375°F) for 12 to 15 minutes, turning halfway, until golden and cooked through. If your sausages are thick, give them an extra 2 to 3 minutes and check they are piping hot in the centre.
- Drain the potatoes well and return them to the hot pot. Let them steam dry for 2 minutes, then mash until smooth. Add the butter and mash again until melted in.
- Warm the whole milk briefly in the pot on a low heat or in the microwave, then stir it into the mash until creamy. Season with the remaining 1 tsp fine sea salt and the black pepper. Serve the sausages on top of the mash straight away.
Recipe notes
Tips
- For the fluffiest mash, drain the potatoes thoroughly and let them steam dry before mashing so they do not turn watery.
- Avoid boiling the milk once it is in the mash; gentle heat keeps the texture creamy and prevents sticking.
Substitutions
- Replace Whole milk with semi-skimmed milk for a slightly lighter mash.
- Replace Butter with unsalted butter if that is what you have, then add a small extra pinch of Fine sea salt to taste.
Storage
- Refrigerate up to 2 days
- Cool quickly and refrigerate in an airtight container. Reheat the mash in a saucepan over a low heat with a splash of Whole milk until piping hot; reheat the Pork sausage in the air fryer at 180°C (355°F) for 4 to 6 minutes until hot throughout.
