Gingerbread Cookies with Treacle and Warm Spices
Why this recipe works
- Deep spiced flavour: Treacle and dark brown sugar add depth, while ginger, cinnamon and cloves give the biscuits their recognisable gingerbread warmth.
- Clean edges and crisp finish: Brief chilling firms the dough for rolling and cutting, helping the cookies keep their shape and crisp at the edges as they cool.
- Good for baking ahead: The baked cookies store well in an airtight container and can be frozen, making them practical for gifting, parties or batch baking.

Ingredient notes
- Use treacle for depth: Treacle brings a darker, slightly bitter sweetness that makes the biscuits taste richer than sugar alone.
- Adjust the clove note: Ground cloves are assertive; allspice gives a softer, rounder warmth if you prefer a less clove-forward flavour.
- Start with room-temperature ingredients: Softened butter and a room-temperature egg help the dough mix smoothly without needing to overwork it.
Common mistakes
- Do not overmix after adding flour: Mix only until no dry patches remain; overworking the dough can make rolled biscuits tougher.
- Do not wait for them to feel crisp in the oven: The cookies should look set and slightly darker at the edges but still feel a little soft in the centre; they firm up as they cool.
- Avoid excessive re-rolling: Re-roll offcuts once for the neatest shapes; repeated rolling can soften the dough and blur the edges.
Make-ahead tips
- Chill the dough before rolling: The dough can be flattened into a disc and chilled until firm enough to roll cleanly; if it becomes too firm, let it soften slightly before cutting.
- Freeze baked cookies: Freeze the cooled cookies in an airtight container, then defrost them uncovered at room temperature to help preserve crisp edges.
- Cool fully before serving: The biscuits have their best texture once completely cool, when the edges have had time to crisp.

Instructions
- In a mixing bowl, whisk together the plain flour, ground ginger, ground cinnamon, ground cloves, bicarbonate of soda and fine sea salt until evenly combined.
- In a second bowl, beat the unsalted butter and dark brown sugar until smooth and slightly lighter. Beat in the treacle, then the egg and vanilla extract until glossy and well mixed.
- Add the dry ingredients to the butter mixture and mix just until a soft dough forms with no dry patches. If it feels sticky, let it stand for 2 minutes to hydrate, then bring it together again.
- Flatten the dough into a disc, cover, and chill for 30 minutes until firm enough to roll cleanly. Meanwhile, heat the oven to 180°C (355°F) and line a baking tray with a baking mat.
- Roll the dough on a lightly floured surface to about 4 mm thick, then cut into shapes. Re-roll the offcuts once for the neatest edges, then arrange the cookies on the tray with a little space between them.
- Bake for 8 to 10 minutes, until the cookies look set and slightly darker at the edges but still a touch soft in the centre. Leave on the tray for 5 minutes to firm up, then transfer to cool completely until crisp at the edges.

Tips
- For sharp, well-defined shapes, keep the dough cool: if it starts to soften while rolling, slide the cut cookies onto a tray and chill for 10 minutes before baking.
- Bake one tray at a time on the middle shelf for the most even colour and clean edges.
- If serving to young children, pregnant people, or anyone vulnerable, use a pasteurised egg where available.
Substitutions
- Replace Vanilla extract with Vanilla bean paste for a slightly fuller vanilla flavour.
- Replace Ground cloves with Allspice for a rounder, less clove-forward spice profile.
- Replace Treacle with Molasses for a similar deep sweetness and colour.
Storage
- Refrigerate up to 5 days
- Store baked cookies in an airtight container at room temperature for up to 5 days. Freeze baked cookies for up to 2 months; defrost at room temperature, uncovered, to keep the edges crisp.
