Air Fryer Teriyaki Salmon

Teriyaki salmon is all about glossy, sweet-savoury glaze meeting rich, flaky fish. In this air fryer version, soy sauce, mirin, brown sugar, ginger and garlic make a quick lacquer that clings to the salmon without needing a long marinade. The high, direct heat helps the surface turn shiny and lightly caramelised while keeping the centre tender, making it a practical dinner for busy evenings. Spring onion, sesame seeds and a final drizzle of toasted sesame oil add freshness, nuttiness and a clean finish.

Why this recipe works

  • Fast cooking: The air fryer cooks salmon quickly while keeping the centre tender and flaky.
  • Balanced glaze: Soy sauce, mirin and brown sugar create the classic sweet-salty teriyaki balance, with ginger and garlic adding savoury depth.
  • Glossy finish: Briefly simmering the glaze before marinating helps dissolve the sugar and gives the salmon a lacquered surface as it cooks.

Timing notes

  • Short marinating time: Ten minutes is enough for the glaze to season the surface without making the salmon too salty.
  • Best served promptly: Serve soon after air frying, while the glaze is glossy and the fish is still moist.
  • Quick workflow: Most of the time is in making and cooling the glaze; the salmon itself needs only a brief cook.

Ingredient notes

  • Mirin matters: Mirin brings gentle sweetness and aroma to the glaze; dry sherry is a useful substitute if mirin is unavailable.
  • Choose even fillets: Fillets of a similar thickness will cook more evenly in the air fryer basket.
  • Prepare aromatics finely: Finely grated ginger and crushed garlic release flavour quickly during the short simmer.

Common mistakes

  • Cooking too long: Start checking at the lower end of the cooking time; the thickest part should reach at least 63°C (145°F) on a food thermometer, with flesh that flakes easily.
  • Letting the glaze scorch: Sugar in the glaze can darken quickly, so avoid adding too much excess marinade to the basket.
  • Using leftover marinade: Reserve the serving glaze before adding raw salmon, keep it separate from the halfway basting portion, and discard any marinade that touched the fish.

Serving ideas

  • Serve with rice: Steamed rice is a natural pairing for the sweet-savoury glaze.
  • Add greens: Serve with steamed broccoli, pak choi or cucumber salad for freshness and balance.
  • Finish simply: Spring onion, sesame seeds and a drizzle of toasted sesame oil add aroma, texture and colour.

  1. In a small saucepan, whisk together the soy sauce, mirin and brown sugar. Finely grate the ginger and crush the garlic into the pan, then bring to a gentle simmer for 2–3 minutes until the sugar dissolves and it looks slightly glossy.
  2. Before adding any fish, reserve 2 tbsp of the glaze in a separate clean bowl and refrigerate for basting and serving. Pour the rest into a mixing bowl and let it cool for 5 minutes so it does not overcook the fish, keeping the salmon refrigerated meanwhile. Add the salmon and turn to coat, then cover and marinate for 10 minutes in the fridge.
  3. Heat the air fryer to 200°C (390°F) for 3 minutes. Lift the salmon from the marinade and place it in the basket, then discard the marinade that touched the raw fish.
  4. Air fry for 7–9 minutes until the salmon flakes easily, the surface is lacquered and the thickest part reaches at least 63°C (145°F) on a food thermometer, cooking longer if needed. Halfway through, spoon 2 tsp of the clean reserved glaze into a separate dish and brush it over the salmon; keep the remaining reserve untouched, discard any glaze left in the basting dish and wash the brush before using it again. When the salmon is done, drizzle over the toasted sesame oil.
  5. Thinly slice the spring onion. Serve the salmon topped with spring onion and sesame seeds, spooning over any remaining clean glaze reserved before adding the fish if you like.

Recipe notes

Tips

  • If your salmon fillets are thicker than 2.5 cm, allow extra cooking time and use a food thermometer to check that the thickest part reaches at least 63°C (145°F).
  • For extra shine, use a clean brush to apply a little of the remaining clean reserved glaze as soon as the cooked salmon comes out of the air fryer.

Substitutions

  • Replace mirin with dry sherry for a similar sweetness and aroma.
  • Replace brown sugar with maple syrup; simmer the glaze for 1 minute longer so it thickens slightly.

Storage

  • Refrigerate up to 2 days
  • Cool and refrigerate in a sealed container for up to 2 days. Reheat in the air fryer at 180°C (355°F) for 3–5 minutes until piping hot, or flake cold over salad.
