Avocado Palm Sugar Smoothie
Why this recipe works
- Naturally creamy: Ripe avocado blends into a thick, velvety base without needing dairy.
- Caramel-like sweetness: Palm sugar brings a deeper sweetness than plain sugar, while fine sea salt sharpens the overall flavour.
- Ready quickly: Everything is blended in one jug, making this a fast chilled drink with very little prep.

Ingredient notes
- Choose a ripe avocado: Use an avocado that yields gently to pressure; underripe fruit can taste grassy and will not blend as smoothly.
- Use good coconut milk: A richer coconut milk gives a fuller, dessert-like texture, while lighter versions make the smoothie thinner.
- Adjust sweetness to taste: Palm sugar varies in intensity, so taste after blending and blend briefly again if you want it more fully dissolved.
Texture tips
- If it is too thick: Add a little more coconut milk and blend again until the mixture moves freely in the blender.
- For the smoothest finish: Blend until the ice is fully broken down and no avocado fibres remain visible.
Timing notes
- Serve straight away: Avocado drinks can darken as they sit, so the colour and flavour are best immediately after blending.
- Keep it properly chilled: The ice is part of the final texture, so pour and serve while the smoothie is still cold and thick.

Ingredients
Instructions
- Add the palm sugar, fine sea salt and coconut milk to a blender. Blend for 10 to 15 seconds to start dissolving the sugar.
- Halve the avocado, remove the stone and scoop the flesh into the blender. Add the ice cubes and blend for 45 to 60 seconds until completely smooth and thick.
- Taste and blend again briefly if you want the palm sugar more fully dissolved. Pour into a glass and serve chilled straight away.
Recipe notes
Tips
- If the smoothie is too thick for your blender, add a little more coconut milk and blend again until it moves freely.
- For the cleanest flavour, use a ripe avocado that yields slightly to gentle pressure and has no bitter spots.
Substitutions
- Replace the coconut milk with oat drink for a lighter, less rich smoothie.
Storage
- Best served immediately. Avocado smoothies can darken as they sit; if you must hold it, chill for up to 2 hours and re-blend before serving.
