Arroz Negro (Squid Ink Rice)

Arroz negro is a striking Spanish rice dish known for its deep black colour and savoury seafood flavour, both coming from squid ink stirred through the cooking stock. Short-grain rice is the right choice here because it absorbs the hot fish stock while releasing enough starch to give the dish a loose, glossy texture rather than a dry pilaf finish. Squid adds gentle chew and briny depth, while onion, garlic and extra virgin olive oil form a simple aromatic base. Served straight from the pot with parsley and lemon, it is bold, salty, umami-rich and best enjoyed freshly cooked, while the rice is still tender and fluid.

Why this recipe works

  • Deep seafood flavour: Squid ink is stirred into hot fish stock so the rice absorbs colour, saltiness and briny depth as it cooks.
  • Glossy rice texture: Short-grain rice releases starch during gentle simmering and regular stirring, giving the dish a loose, creamy finish.
  • Bright finish: Lemon and parsley cut through the richness of the ink and stock, keeping the final dish lively rather than heavy.

Ingredient notes

  • Use short-grain rice: Short-grain rice is important here because it absorbs the stock while releasing enough starch for a glossy, cohesive texture.
  • Squid ink matters: Squid ink provides the dish’s signature colour and savoury depth; stir it into hot stock first so it disperses evenly.
  • Keep the stock hot: Adding hot stock helps the rice cook evenly and avoids slowing the simmer partway through cooking.

Texture tips

  • For a looser finish: Add the remaining hot stock gradually as the rice cooks, keeping it just submerged rather than letting it dry out.
  • Keep a slight bite: Stop cooking when the grains are tender but still lightly firm in the centre; the rice will continue to settle briefly off the heat.

Common mistakes

  • Avoid catching on the base: Keep the heat at a steady medium simmer and stir more often towards the end, when the rice thickens and is more likely to stick.
  • Do not let it turn dry: Arroz negro should be glossy and slightly loose when served, not stiff or compact.

Serving ideas

  • Finish with lemon and parsley: Fresh parsley and lemon wedges bring colour and acidity, balancing the squid ink’s rich, savoury flavour.
  • Serve with simple sides: A crisp green salad or lightly dressed vegetables work well alongside the richness of the rice.

  1. Warm the fish stock in a saucepan or microwave until steaming hot. Stir the squid ink into a small ladleful of the hot stock until smooth, then stir it back into the remaining stock. Keep warm over a very low heat.
  2. Finely chop the yellow onion and thinly slice the garlic. Cut the squid into bite-size pieces (and slice the tentacles if large). Finely chop the fresh flat-leaf parsley and cut the lemon into wedges.
  3. Heat the extra virgin olive oil in a large pot over a medium heat. Add the onion with a pinch of salt and cook for 8 to 10 minutes until soft and translucent, stirring regularly. Add the garlic and cook for 1 minute until fragrant.
  4. Add the squid and cook for 2 to 3 minutes, just until it turns opaque. Stir in the short-grain rice and cook for 2 minutes, stirring, until the grains look glossy and lightly toasted. Keep the heat at medium so the rice does not catch.
  5. Pour in about three-quarters of the hot squid ink stock and bring to a gentle simmer. Cook for 18 to 22 minutes, stirring every couple of minutes, adding more stock as needed to keep the rice just submerged. The rice is ready when tender with a slight bite and the mixture looks loose and glossy rather than dry.
  6. Take off the heat and stir in most of the parsley, reserving a little for serving. Rest for 2 minutes, then taste and adjust with a squeeze of lemon to brighten the flavour. Serve straight away with the remaining parsley and lemon wedges.

Recipe notes

Tips

  • Keep the stock hot while the rice cooks; adding cold stock can slow cooking and make the texture uneven.
  • Stir regularly, especially towards the end, to prevent sticking and to encourage a creamy, glossy finish.
  • If serving vulnerable groups, make sure the squid is cooked until opaque and tender, and reheat leftovers until piping hot.

Substitutions

  • Replace Fresh flat-leaf parsley with Fresh basil for a softer, sweeter herbal finish.
  • Replace Lemon with Lime for a sharper, more aromatic citrus lift.

Storage

  • Refrigerate up to 2 days
  • Cool quickly, cover and refrigerate. Reheat gently in a saucepan with a splash of water until piping hot, stirring often to loosen the rice.
