Sopa Castellana (Castilian Garlic and Bread Soup with Paprika)
Why this recipe works
- Deep flavour from simple ingredients: Garlic is gently infused into olive oil before the paprika is bloomed, giving the broth a rounded savoury base without needing many ingredients.
- Rustic, satisfying texture: Day-old bread softens into the stock, lightly thickening the soup and making it more substantial.
- Classic finishing method: Poaching the eggs directly in the soup enriches each serving while keeping the preparation simple and contained in one pot.

Authenticity notes
- Castilian style: Sopa Castellana is closely related to sopa de ajo, the Spanish garlic soup traditionally made with bread, paprika and stock.
- Use stale bread if possible: Day-old crusty bread absorbs the broth well and gives the soup its characteristic rustic body.
Ingredient notes
- Choose sweet paprika: Sweet paprika gives the soup warmth, colour and gentle smokiness without turning it spicy.
- Bread matters: A sturdy white loaf or country bread holds its texture better than very soft sliced bread.
Common mistakes
- Do not brown the garlic: Keep the heat gentle; deeply browned garlic can make the whole soup taste bitter.
- Bloom paprika off the heat: Paprika catches quickly in hot oil, so stirring it in away from direct heat keeps the flavour rounded rather than harsh.
- Poach eggs just before serving: The eggs are best cooked at the end so the whites set while the yolks stay soft, unless firmer yolks are preferred.
Make-ahead tips
- Make the soup base ahead: The garlic, paprika, stock and bread base can be made in advance and reheated gently before adding fresh eggs.
- Reheat gently: Warm the soup over low heat and loosen it with a little extra stock if the bread has thickened it in the fridge.

Ingredients
Instructions
- Slice the garlic thinly. Tear the crusty white bread into rough bite-size pieces.
- Warm the extra virgin olive oil in a large pot over medium-low heat. Add the garlic and cook for 2 to 4 minutes, stirring, until pale golden and fragrant (do not let it brown).
- Take the pot off the heat and stir in the sweet paprika for 20 to 30 seconds so it blooms without burning. Pour in a splash of the chicken stock to stop the paprika catching, then add the remaining stock and the bay leaves.
- Bring to a gentle simmer, then add the bread. Simmer for 15 minutes, stirring occasionally, until the bread has softened and the soup looks lightly thickened.
- Season with the fine sea salt and black pepper. Taste and adjust seasoning, keeping the soup at a gentle simmer.
- Crack in the eggs, spacing them around the pot. Poach for 3 to 5 minutes until the whites are set and the yolks are still soft, or cook a little longer if you prefer firmer yolks.
- Ladle into bowls, making sure each bowl gets an egg. Serve straight away while the eggs are still runny.
Recipe notes
Tips
- Keep the heat low when frying the garlic; once it turns deep golden it can taste bitter in the finished soup.
- Stir the sweet paprika in off the heat so it blooms in the oil without scorching, which would make the soup harsh.
- If serving anyone who is pregnant, elderly, or immunocompromised, cook the eggs until the yolks are firm.
Substitutions
- Replace Chicken stock with Vegetable broth for a lighter, vegetarian-style soup.
- Replace Crusty white bread with Country bread for a slightly heartier texture.
Storage
- Refrigerate up to 2 days
- Cool and refrigerate the soup promptly; store eggs and soup together only if the eggs are fully cooked. Reheat gently in a saucepan over low heat until piping hot, adding a splash of chicken stock if it has thickened; for best results, poach fresh eggs when serving.
