Cordero a la Pastora (Spanish Lamb Stew with Potatoes and Peppers)
Why this recipe works
- Deep savoury base: Browning the lamb and deglazing with white wine pulls flavour from the pot into the broth.
- Gentle simmering: A low simmer gives lamb shoulder time to soften without making the meat tight or the broth cloudy.
- Naturally hearty: Chunky potatoes cook directly in the stew, absorbing flavour while lightly thickening the broth.

Ingredient notes
- Choose lamb shoulder: Lamb shoulder suits slow simmering because it becomes tender and flavourful as it cooks.
- Use sweet paprika: Sweet paprika gives the stew its warm colour and rounded savoury flavour without adding heat.
- Cut potatoes chunky: Larger potato pieces hold their shape better while still releasing enough starch to enrich the broth.
Common mistakes
- Boiling too hard: Keep the stew at a gentle simmer; a rolling boil can make the lamb firm and the broth less clear.
- Scorching the paprika: Paprika can turn bitter if it catches, so stir it briefly before adding the wine.
- Crowding the lamb: Brown the meat in batches so it colours properly rather than steaming in the pot.
Make-ahead tips
- Good for the next day: The stew holds well in the fridge and the flavours settle after resting overnight.
- Reheat gently: Warm on the hob until piping hot, adding a little stock if the broth has thickened too much.
- Freezer-friendly: Freeze after cooling, then defrost overnight in the fridge before reheating gently.
Ingredient swaps
- Without wine: Replace the dry white wine with chicken stock for an alcohol-free version.
- Smokier flavour: Use smoked paprika instead of sweet paprika if you prefer a deeper, smokier stew.

Ingredients
Instructions
- Cut the lamb into bite-sized pieces and season with the salt and pepper. Heat the olive oil in a Dutch oven over medium-high heat.
- Brown the lamb in batches until well coloured, 6 to 8 minutes per batch, then return it all to the pot. Lower the heat to medium.
- Add the onion and cook, stirring, for 6 to 8 minutes until softened. Add the red pepper and cook for 4 to 5 minutes until starting to soften.
- Stir in the garlic for 30 seconds until fragrant, then add the sweet paprika and stir for 10 seconds. Pour in the wine and scrape up any browned bits from the base of the pot.
- Add the chicken stock and bay leaves, then bring to a gentle simmer. Cover and cook on low for 60 minutes, stirring occasionally, until the lamb is starting to turn tender.
- Peel the potatoes and cut into chunky pieces, then stir them into the stew. Cover and simmer for 15 to 20 minutes until the potatoes are tender and the lamb is very soft; add a splash of stock if you want more broth.
- Taste and adjust seasoning with a little more salt and pepper if needed. Rest off the heat for 5 minutes, then serve hot with plenty of broth.
Recipe notes
Tips
- Keep the simmer gentle; a hard boil can make the lamb tighten and the broth turn cloudy.
- For a thicker stew, lightly crush a few potato pieces against the side of the pot and stir them back in for a natural thickener.
- If serving vulnerable groups, ensure the stew is simmered until the lamb is fully cooked and piping hot throughout.
Substitutions
- Replace Dry White Wine with the same amount of Chicken stock for an alcohol-free version.
- Replace Sweet paprika with Smoked paprika for a deeper, smokier flavour.
Storage
- Refrigerate up to 3 days
- Cool quickly, then refrigerate in a sealed container for up to 3 days. Reheat gently on the hob until piping hot, adding a splash of chicken stock to loosen if needed; freeze for up to 3 months and defrost overnight in the fridge before reheating.
