Cordero Asado a la Segoviana (Segovian-Style Roast Lamb)
Why this recipe works
- Slow roast, hot finish: A gentle roast tenderises the lamb before a final burst of high heat crisps and browns the skin.
- Simple, savoury depth: Garlic, bay leaves and dry white wine season the pan juices without masking the flavour of the lamb.
- Generous serving style: Carved at the table with roasting juices spooned over, it works well as a satisfying centrepiece for sharing.

Authenticity notes
- Segovian-style simplicity: The seasoning is intentionally restrained, letting the lamb, salt, garlic, bay and roasting juices define the dish.
- Built around roasting: The character of the dish comes from slow oven cooking followed by a hotter finish, rather than from a heavy sauce or marinade.
- Serve plainly: Boiled potatoes or a simple salad suit the rich meat and keep the pan juices as the main accompaniment.
Timing notes
- Mostly unattended: The preparation is brief; most of the time is spent roasting, with occasional basting to keep the pan juices savoury.
- Rest before carving: Allow the lamb to rest for 15 minutes so the juices settle before slicing or pulling the meat apart.
- Best served after crisping: Serve soon after the final hot roast, while the skin is crisp and the pan juices are bubbling and aromatic.
Texture tips
- Keep the skin dry: Pat the lamb dry before seasoning and pour the wine around the meat rather than over the skin.
- Protect the pan juices: If the roasting pan starts to look dry, add a small splash of water so the juices do not catch or become harsh.
Make-ahead tips
- Reheat gently: Reheat leftovers covered in a 180°C (355°F) oven until piping hot, then uncover briefly if you want to refresh the skin.
- Freeze with juices: Freeze carved lamb with some of the roasting juices to help protect the meat from drying out.

Ingredients
Instructions
- Heat the oven to 160°C (320°F). Pat the lamb dry, then rub all over with the olive oil and fine sea salt. Lightly crush the garlic cloves with the flat of a knife.
- Put the lamb in a roasting pan, scatter the garlic around it and tuck in the bay leaves. Pour the white wine into the pan around the lamb, not over the skin. Roast for 2 hours, basting the lamb with the pan juices every 30 minutes, until very tender.
- Increase the oven to 220°C (430°F) and roast for 20 to 30 minutes more, until the skin is deeply browned and crisp and the juices are bubbling. If the pan looks dry at any point, add a small splash of water to prevent the juices from catching. Rest the lamb for 15 minutes before carving, then spoon over the roasting juices.

Serving suggestions
This recipe pairs well with:
Tips
- For the crispest skin, keep the lamb uncovered and avoid pouring the wine directly over the top.
- If you have a thermometer, aim for about 90°C (195°F) in the thickest part for pull-apart tenderness, then finish hot to crisp the skin.
- If serving vulnerable people, cook the lamb until piping hot throughout and avoid tasting the pan juices until they have bubbled well.
Substitutions
- Replace White wine with dry sherry for a deeper, nuttier pan juice.
- Replace Olive oil with duck fat for extra richness and browning.
Storage
- Refrigerate up to 3 days
- Cool leftovers quickly, then refrigerate in a sealed container with a little of the pan juices. Reheat covered in a 180°C (355°F) oven until piping hot; crisp the skin uncovered for the last few minutes. Freeze carved meat with juices for best moisture.
