Slow Cooker Pot Roast with Root Vegetables

Pot roast is a classic American-style braise, valued for turning a hardworking cut such as beef chuck into tender, sliceable meat with a deeply savoury gravy. In this slow cooker version, the beef is browned first for flavour, then cooked gently with onion, beef stock, tomato purée and bay leaves until the fibres soften and the braising liquid becomes rich and aromatic. Large chunks of potato, carrot and parsnip cook alongside the meat, absorbing the juices while keeping enough structure to serve neatly. It is the kind of low-effort dinner that suits a cold evening, with everything served together and plenty of glossy pan juices spooned over the top.

Why this recipe works

  • Deep savoury base: Browning the beef and briefly cooking the tomato purée builds a richer braising liquid before everything goes into the slow cooker.
  • Tender, hearty finish: Long, low cooking suits beef chuck, helping it become tender while the potatoes, carrots and parsnips absorb the savoury juices.
  • Good for planning ahead: The beef and vegetables store well in their braising liquid, making leftovers easy to chill, freeze and reheat gently.

Timing notes

  • Mostly hands-off: The active work is mainly browning the beef and preparing the vegetables; the slow cooker handles the long cooking time.
  • Rest before slicing: Let the beef rest briefly after cooking so it slices more neatly and holds onto its juices.

Texture tips

  • Cook until properly tender: Beef chuck should feel very tender before serving; if it still resists slicing, it usually needs more time rather than higher heat.
  • Keep vegetables chunky: Large pieces of potato, carrot and parsnip are less likely to collapse during the long cook.

Common mistakes

  • Skipping the sear: Adding the beef straight to the slow cooker gives a flatter flavour; a deep brown crust is key to a richer sauce.
  • Cutting too soon: Slice the beef across the grain after resting, not straight from the cooker, for a cleaner and more tender result.

Make-ahead tips

  • Reheat with the juices: Warm the beef and vegetables gently in their braising liquid to help prevent the meat from drying out.
  • Freeze in portions: Pack portions with plenty of liquid so the meat stays moist after defrosting and reheating.

  1. Pat the beef dry, then season all over with the fine sea salt and black pepper. Peel the onion and cut into thick wedges. Peel the potatoes, carrots and parsnips, then cut into large chunks so they hold their shape.
  2. Heat the vegetable oil in a large frying pan over medium-high heat. Brown the beef well on all sides, 8 to 10 minutes total, until deeply coloured. Transfer the beef to the slow cooker.
  3. Add the onion to the pan and cook for 2 to 3 minutes until lightly softened. Stir in the tomato purée and cook for 1 minute to take the raw edge off. Pour in the beef stock and scrape up any browned bits from the base of the pan.
  4. Arrange the potatoes, carrots and parsnips around the beef in the slow cooker. Pour over the stock mixture and tuck in the bay leaves. Cover and cook on low for 8 hours, until the beef is very tender and the vegetables are soft but not falling apart.
  5. Lift out the beef and rest for 10 minutes before slicing thickly across the grain. Remove and discard the bay leaves, then spoon the vegetables and braising liquid onto plates. Serve the sliced beef with plenty of the savoury juices.

Recipe notes

Tips

  • For the best flavour, take time to brown the beef until properly dark; that colour is what makes the braising liquid taste rich.
  • Keep the vegetable pieces large so they stay intact through the long cook.
  • Food safety: if serving vulnerable people, ensure the beef is cooked until piping hot throughout before serving.

Substitutions

  • Replace Russet potato with Yukon Gold potato for a creamier texture that still holds its shape.
  • Replace Vegetable oil with olive oil for a slightly fruitier base note.
  • Use concentrated tomato paste from a small tin or tube in the stated amount. This is the same product as the tomato purée specified here.

Storage

  • Refrigerate up to 3 days
  • Cool completely, then refrigerate in a sealed container with the braising liquid. Reheat gently in a saucepan over low heat, or in a 180°C (355°F) oven covered until piping hot. Freeze in portions with plenty of liquid for up to 3 months; defrost overnight in the fridge before reheating.
