Ratatouille Provençale (French Vegetable Stew)

Ratatouille Provençale brings together the vegetables most associated with southern French cooking: aubergine, courgette, pepper, tomato, onion, garlic and herbs softened in olive oil. Rather than becoming a heavy stew, the best versions keep the vegetables distinct, tender and glossy, with a loose tomato base carrying the thyme, bay and basil. Browning the firmer vegetables first gives them flavour and helps them hold their shape during the final gentle simmer. Serve it warm with crusty bread as a simple main, spoon it alongside grilled dishes, or make it ahead so the flavours have time to settle.

Why this recipe works

  • Layered vegetable flavour: Cooking the aubergine, courgette and peppers separately lets each vegetable develop light colour before they are folded into the tomato base.
  • Classic gentle cooking: A low simmer softens the vegetables while helping them keep their shape, giving the stew its recognisable Provençal texture.
  • Improves as it rests: The herbs, garlic and tomato have time to settle into the vegetables, making ratatouille especially good when prepared ahead and reheated gently.
  • Flexible serving options: It works as a light main with bread, a vegetable side, or a spoonable topping for grains, pasta or eggs.

Texture tips

  • Keep the vegetables distinct: Cut the vegetables into chunky, even pieces and stir gently once they return to the pot so they soften without breaking down.
  • Reduce a watery sauce: If the tomatoes release a lot of liquid, simmer uncovered near the end until the sauce looks loose but not soupy.

Ingredient notes

  • Choose firm vegetables: Firm aubergine and courgette hold their shape better during simmering and give the finished stew a cleaner texture.
  • Use ripe tomatoes: Ripe tomatoes break down into a sweeter, fresher sauce; underripe tomatoes can make the stew taste flatter.

Make-ahead tips

  • Good the next day: Ratatouille keeps well in the fridge and often tastes more rounded after the flavours have had time to settle.
  • Reheat gently: Warm it over low heat and stir carefully to avoid breaking up the vegetables; add a small splash of water only if it looks dry.
  • Freeze in portions: Cool completely before freezing, then defrost overnight in the fridge and reheat gently until piping hot.

Authenticity notes

  • Provençal style: Ratatouille is closely associated with Provence and the south of France, where summer vegetables, olive oil and herbs are central to the dish.
  • Vegetable order matters: Many traditional versions cook the vegetables separately before combining them, a method that helps preserve their individual textures.

  1. Cut the aubergine, courgettes and red peppers into chunky, even pieces so they cook at the same rate. Finely slice the onion and thinly slice the garlic. Roughly chop the tomatoes and pick the basil leaves; keep the thyme sprigs whole.
  2. Heat 3 tbsp of the olive oil in a Dutch oven over medium-high heat. Add the aubergine with a pinch of the fine sea salt and cook for 6 to 8 minutes, stirring now and then, until lightly browned and starting to soften. Tip into a bowl.
  3. Add 1 tbsp olive oil to the pot, then cook the courgettes for 4 to 5 minutes until lightly golden at the edges. Transfer to the bowl with the aubergine. Add the remaining 1 tbsp olive oil and cook the peppers for 5 to 6 minutes until just tender, then add them to the bowl.
  4. Lower the heat to medium and add the onion to the pot with a pinch more salt. Cook for 8 to 10 minutes, stirring, until soft and sweet but not browned. Stir in the garlic for 30 seconds until fragrant.
  5. Add the tomatoes, bay leaves, thyme, remaining fine sea salt and the black pepper. Bring to a gentle simmer and cook for 10 minutes, stirring occasionally, until the tomatoes break down into a loose sauce. Scrape the base of the pot as you stir to lift any flavour.
  6. Return the aubergine, courgettes and peppers to the pot and stir gently to coat in the tomato base. Partially cover and simmer on low for 15 to 18 minutes, stirring carefully once or twice, until the vegetables are tender but still holding their shape. Taste and adjust seasoning with a little more salt and pepper if needed.
  7. Turn off the heat and let the ratatouille stand for 5 minutes so the flavours settle. Stir through most of the basil, then scatter the rest over the top. Serve warm as a main or side.

Serving suggestions

This recipe pairs well with:

Crusty bread

Tips

  • Keep the simmer gentle and stir carefully so the vegetables stay distinct rather than turning mushy.
  • If your tomatoes are very juicy, simmer uncovered for the last 5 minutes to reduce the sauce slightly.
  • Ratatouille tastes even better after resting; if you have time, cool for 20 minutes then reheat gently before serving.

Substitutions

  • Replace Fresh thyme with 1 tsp dried thyme, added with the tomatoes.
  • Replace Fresh basil with 1 tsp dried basil, stirred in at the end.

Storage

  • Refrigerate up to 4 days
  • Cool completely, then refrigerate in a sealed container. Reheat gently in a saucepan over low heat until piping hot, adding a small splash of water only if it looks dry. Freeze in portions for up to 3 months and defrost overnight in the fridge before reheating.
