Bouchées à la Reine (Vol-au-Vents with Creamy Chicken and Mushrooms)

Crisp vol-au-vent cases filled with a creamy chicken and mushroom ragout make bouchées à la reine a recognisably French savoury pastry dish, often served as an elegant starter or light main. The defining pleasure is the combination of deeply golden, flaky puff pastry and a silky filling enriched with crème fraîche, Dijon mustard, white wine and stock. Mushrooms add savoury depth, while shallot and parsley keep the sauce aromatic rather than heavy. Best served hot and filled at the last moment, these pastries suit a dinner party but are practical enough for a special weekend meal, especially when the pastry and filling are kept separate until serving.

Why this recipe works

  • Crisp pastry, creamy filling: The vol-au-vent cases are baked separately, so the pastry stays flaky while the hot filling remains soft and rich.
  • Built-in savoury depth: Shallots, browned mushrooms, white wine, stock and Dijon create a balanced base before crème fraîche rounds the sauce.
  • Elegant but practical: Individual pastry cases work well as a starter, light supper or small entertaining dish without requiring complicated plating.

Ingredient notes

  • Choose all-butter pastry: All-butter puff pastry gives the cases better flavour and a more delicate, crisp finish than standard pastry.
  • Use firm mushrooms: Cremini mushrooms should be firm and dry-looking; excess moisture can make the filling taste flat and watery.
  • Crème fraîche keeps the sauce rounded: Crème fraîche adds gentle tang and richness, giving the filling a smoother finish than stock alone.

Common mistakes

  • Do not rush the mushrooms: Let their liquid evaporate before adding the chicken, otherwise the sauce can become thin rather than glossy.
  • Keep the heat low after adding crème fraîche: Fold it in off the heat or over a very gentle heat; boiling can make the sauce split.
  • Simmer the chicken gently: Chicken breast is lean, so cook it only until done and keep the sauce warm rather than vigorously bubbling.

Make-ahead tips

  • Make the filling in advance: The chicken and mushroom filling can be cooked ahead, chilled, then reheated gently until piping hot.
  • Keep pastry and filling apart: Store the cases separately from the sauce so the pastry layers do not soften.
  • Refresh the pastry before serving: Warm the vol-au-vent cases in a 180°C (355°F) oven, then fill them just before serving.

  1. Heat the oven to 200°C (390°F). Roll the puff pastry to about 3 mm thick, then cut 8 rounds and cut a smaller round from the centre of 4 of them to make rings. Set the 4 solid bases on a baking tray, brush the edges lightly with water, top with the rings, then bake for 15 to 18 minutes until well risen and deep golden.
  2. Meanwhile, melt the butter in a saucepan over a medium heat. Finely chop the shallots, slice the mushrooms, and cut the chicken into bite-size pieces. Cook the shallots with a pinch of salt for 2 minutes, then add the mushrooms and cook for 6 to 8 minutes until their liquid has evaporated and they are lightly coloured.
  3. Add the chicken and cook for 3 to 4 minutes, stirring, until the outside turns opaque. Pour in the wine and simmer for 2 to 3 minutes to reduce slightly. Add the stock and simmer gently for 6 to 8 minutes until the chicken is cooked through and the sauce looks lightly reduced.
  4. Stir in the Dijon mustard, then take the pan off the heat and fold in the crème fraiche so it stays silky. Finely chop the parsley and stir most of it through, reserving a little for serving. Taste and adjust seasoning if needed, then keep the filling warm over a very low heat without boiling.
  5. When the pastry is baked, lift out any soft centres to create a cavity and return the cases to the oven for 2 minutes to crisp. Spoon the hot filling into the warm vol-au-vents and sprinkle with the reserved parsley. Serve straight away while the pastry is crisp.

Recipe notes

Tips

  • For the crispest result, keep the vol-au-vents warm in a low oven while you finish the sauce, then fill at the last moment.
  • Once you add the crème fraiche, keep the heat very low and do not let the sauce boil or it can split.
  • If serving anyone who is pregnant, elderly, or immunocompromised, make sure the chicken is cooked through and the filling is piping hot before serving.

Substitutions

  • Replace Dry White Wine with Chicken stock for an alcohol-free version, and simmer a little longer to concentrate the flavour.
  • Replace Crème fraiche with Cream for a looser, richer sauce, and keep it just below a simmer.
  • Replace Cremini mushrooms with Button mushrooms for a milder mushroom flavour.

Storage

  • Refrigerate up to 2 days
  • Store the filling and pastry separately in the fridge. Reheat the filling gently in a saucepan over a low heat until piping hot, and warm the vol-au-vents in a 180°C (355°F) oven for 5 to 7 minutes, then fill just before serving.
