Caponata Siciliana (Sicilian Sweet and Sour Aubergine Stew)
Why this recipe works
- Balanced agrodolce flavour: Red wine vinegar and sugar give the stew its signature sweet-sour lift, balanced by tomatoes, olives and capers.
- Depth from simple vegetables: Browning the aubergine first adds savoury depth before it finishes gently in the tomato-based sauce.
- Improves as it rests: A short cooling time allows the aubergine, vinegar, herbs and briny ingredients to settle into a more cohesive flavour.

Timing notes
- Let it cool before serving: Caponata is best served warm or at room temperature, not straight from the pan. Resting helps the sweet-sour sauce mellow and cling to the vegetables.
- Even better the next day: The flavours continue to develop in the fridge, making this a useful dish to prepare ahead for antipasti, lunches or side dishes.
Ingredient notes
- Choose firm aubergines: Firm, glossy aubergines hold their shape better during browning and simmering, giving the finished caponata a tender but not collapsed texture.
- Adjust the sweet-sour balance: If the vinegar tastes too sharp, let the mixture simmer a little longer. If it feels flat, add a touch more vinegar and season to taste.
- Use punchy olives and capers: The briny ingredients are central to caponata’s character, so choose olives and capers with good flavour rather than very mild versions.
Common mistakes
- Crowding the aubergine: If the aubergine is packed too tightly, it steams instead of browning. Cook it in batches if needed so it colours properly.
- Stopping before the sauce turns glossy: The tomato, vinegar and oil should reduce into a coating sauce rather than stay watery. Simmer until the vegetables look well glazed.
- Serving too soon: The flavours are sharper immediately after cooking. A short rest gives the vinegar, sugar and savoury ingredients time to come into balance.
Serving ideas
- Serve with grilled mains: Its tangy, briny flavour pairs well with grilled fish, chicken, lamb or simple roasted vegetables.
- Serve as antipasto: Spoon it onto toasted bread or serve in a shallow bowl with extra basil for a simple Sicilian-style starter.
- Finish with fresh herbs: Add basil just before serving so it stays fragrant and fresh against the rich, cooked vegetables.

Ingredients
Instructions
- Cut the aubergine into 2 cm cubes. Slice the celery and finely chop the onion. Roughly chop the tomatoes.
- Heat 60 ml of the olive oil in a large frying pan over medium-high heat. Add the aubergine and 0.5 tsp of the fine sea salt, then cook for 10 to 12 minutes, stirring often, until well browned and starting to soften. Tip into a bowl.
- Add the remaining 30 ml olive oil to the pan and reduce the heat to medium. Add the onion and celery with another 0.5 tsp salt, then cook for 8 to 10 minutes until softened and lightly golden. Stir in the tomato purée and cook for 1 minute until it darkens slightly.
- Add the tomatoes, capers, green pitted olives, red wine vinegar, caster sugar, and the remaining 0.5 tsp salt. Bring to a gentle simmer, then cook for 15 to 20 minutes, stirring now and then, until the tomatoes break down and the mixture looks glossy. Return the aubergine to the pan and simmer for 5 minutes more until everything is tender and well coated.
- Take off the heat and leave to cool for 20 minutes, then stir through most of the fresh basil. Taste and adjust the sweet-sour balance by simmering 2 minutes longer if you want it glossier. Serve at room temperature, scattered with the remaining basil.
Recipe notes
Tips
- For the best texture, brown the aubergine in a single layer; if your pan is small, do it in two batches so it colours rather than steams.
- Caponata improves as it rests; if you have time, leave it for 1 hour at room temperature before serving so the flavours meld.
Substitutions
- Replace Red wine vinegar with White wine vinegar for a slightly softer acidity.
- Replace Fresh basil with Fresh parsley for a more herbaceous, less sweet finish.
Storage
- Refrigerate up to 4 days
- Cool completely, then refrigerate in a sealed container. Serve at room temperature, or reheat gently in a frying pan over low heat with a small splash of water until warmed through. Freeze in an airtight container for up to 2 months and thaw overnight in the fridge.
