Fusion Kroket Bites (Chicken Croquette Snack Bites)
Why this recipe works
- Crisp outside, creamy centre: A chilled béchamel-based filling firms up enough to shape, then softens during frying while the breadcrumb coating turns crisp and golden.
- Savoury depth: Softened onion, garlic and Dijon mustard give the mild chicken filling more character without overpowering the creamy base.
- Easy to prepare in stages: The filling needs chilling before shaping, which makes the recipe well suited to preparing ahead and frying just before serving.

Timing notes
- Chill until properly firm: The filling should be cold and sturdy before shaping. If it feels soft or sticky, return it to the fridge rather than adding extra breadcrumbs.
- Best served hot: Serve the bites soon after frying, while the coating is crisp and the centre is creamy and hot.
Texture tips
- Cook the béchamel thick: The mixture should pull away from the pan before the chicken is folded in; a loose sauce will be harder to shape later.
- Press the crumbs on firmly: A well-adhered breadcrumb coating gives a more even crust and helps protect the creamy filling during frying.
Make-ahead tips
- Make the filling in advance: The chicken béchamel mixture can be prepared, spread on a tray and chilled ahead of shaping.
- Freezer-friendly: Cool completely, freeze in a single layer, then bag once firm. Reheat from frozen on a baking tray until piping hot throughout.
- Reheat for crispness: Use the oven rather than the microwave when reheating; dry heat helps restore the breadcrumb crust.
Ingredient notes
- Chicken thighs stay tender: Boneless, skinless thighs are well suited to shredding and give the filling a juicier texture than very lean meat.
- Use plain breadcrumbs or panko: Regular breadcrumbs give a classic compact crust, while panko creates a lighter, more open crunch.
- Mustard adds balance: Dijon cuts through the richness of the béchamel; whole-grain mustard can be used for a softer flavour and a little texture.

Instructions
- Put the chicken thighs in a saucepan and cover with water. Add 0.5 tsp of the fine sea salt, bring to a gentle simmer, then cook for 12 to 15 minutes until the chicken is cooked through. Lift out, cool slightly, then shred finely.
- Finely chop the yellow onion and crush the garlic. Melt the unsalted butter in a saucepan over medium heat, then cook the onion with a pinch of the remaining salt for 6 to 8 minutes until soft but not coloured. Stir in the garlic and cook for 1 minute.
- Stir the plain flour into the butter and cook, stirring, for 2 minutes. Gradually whisk in the whole milk until smooth, then simmer gently for 4 to 6 minutes, stirring, until very thick and pulling away from the pan. Stir in the Dijon mustard, the remaining fine sea salt, and the black pepper.
- Fold the shredded chicken into the thick béchamel until evenly combined. Spread the mixture on a tray in an even layer and cool to room temperature. Chill until firm enough to shape.
- Beat the eggs in a bowl. Put the breadcrumbs in a second bowl. Shape the chilled mixture into small bites, then coat each one in egg and breadcrumbs, pressing gently so the crumbs adhere well.
- Heat the sunflower oil in a deep pot to 175°C (350°F). Fry the bites in batches for 2 to 3 minutes, turning, until deep golden and crisp. Drain briefly, then serve hot.
Recipe notes
Tips
- For the neatest shaping, keep the mixture cold and work in small batches, returning any unshaped mixture to the fridge as you go.
- Keep the béchamel very thick before chilling; it should hold its shape and not slump when stirred.
- If serving vulnerable groups, ensure the chicken is fully cooked through and the bites are fried until piping hot in the centre.
Substitutions
- Replace Chicken thighs with Chicken breast boneless skinless for a leaner filling; reduce the poaching time slightly so it stays juicy.
- Replace Dijon mustard with Whole-grain mustard for a milder heat and a more textured bite.
- Replace Breadcrumbs with Panko breadcrumbs for a lighter, crunchier coating.
Storage
- Refrigerate up to 2 days
- Cool completely, then refrigerate in a sealed container for up to 2 days. Reheat on a baking tray at 200°C (390°F) for 10 to 12 minutes until piping hot. Freeze in a single layer, then bag; reheat from frozen at 200°C (390°F) for 15 to 18 minutes.
